I know we are not supposed to have favourite clients but this is what happens when you work with simplybetter on a host of projects for a well known company. Outstanding working relationships, clear lines of communication, regular updates and a professional team as well. This time we were in Birmingham for the Euronics Expo. Amazing looking stand and some delicious foods to include BBQ brisket burnt ends, peach Margaritas, warmed potato salad with a pea, mint and pomegranate dressing and of course the Eton mess ice cream made in the new Creami machines.

More from 2 weeks in Palma. I am so blessed and lucky to have these clients and to be able to miss storms Betty through to isla. By working sooo hard but in the sun.
Many thanks to my entire team for being so professional from start to finish with more to follow in a whole hosts of countries. An amazing start to 2024 and we hope this continues. Thanks again to the entire team and my amazing clients for allowing us the opportunity to work at such a prestigious level.

I can think of worse ways to spend the end of January. 2 weeks in Palma, Spain, with a team of 11 chefs and catering assistants and managers, smashing it out of the park for another major VIP client.

And yet another successful corporate event. This time, we were at Leeds FC. At the iconic Elland Road, for an ice cream and smoothie event for over 400 social media influences and content creators. Thank God for back of house, too many social people for me, I am too old skool. 😅

Thai spiced, twice cooked salmon fillets with a spicy green Thai curry sauce served with Jasmine scented sticky rice, this was then followed by a citrus tart with fresh fruits and a mango coulis or gluten free brownies with fresh strawberries and a mango coulis with a shot glass of homemade chocolate milkshake.

The perfect mains and desserts to accompany the starters. All served by ourselves and some amazing help from the clients team. I'm really looking forward to the next event already.

A Vietnamese avocado, fresh crab and Thai spiced prawns tian with a plum and sesame dressing, frissae and charred lemon finish. This went down a treat with both the client and the guests. This can be served at your event. Just drop us a line and let us know what and where and when your event is.

Today marked our 250th corporate buffet of the year so far. This beautiful spread was for one of our VIP clients with directors flying in from as far as Dubai, so we were honoured to be catering for such an illustrious group as these. Tart au citron served with a raspberry and passion fruit coulis. And not forgetting the brownie garden with brownie soil and shot glasses if chocolate milkshake, homemade of course!!! Nothing else really needs to be said but enjoy!!

Oi oi, you naughty boy! What's this? It's only our old favourite, coming out to play yet again, this one is so naughty it should be arrested and put away for giving too much pleasure to the masses. Pulled pork in a southern comfort and lime glazed BBQ sauce. Yes please sir, suit you sir!!!!! Know what I mean 😏

4 hours in and both the ribs and the Asian pork belly look simply lush. Banging brother, just banging. Nuff said? Of course not, these smell so epic. Gonna be the taste test from heaven.

18 hour smoked brisket finished, now its time to get those ribs and Asian marinated pork belly's into the smoker. Loaded up with some pecan wood chips and the smoke begins. Watch this space in 6 hours for the first update.

Brisket is ready, it passes the look test, the feel test and of course most importantly the taste test. 18 hours of low n slow till we hit that sweet spot. Time for a chill prior to slice and serve.

7 hours in and looking as sexy and naughty as the devil himself. Just tried a slither and it tastes just as good too. This is going to be one happy client.
