Here’s a little about the face behind Buie Kitchen!
My names Oli and I’m a 24 year old chef from Hertfordshire. Working in the industry for 5 years now has taught me many things about what it means to be a chef and a good one. I am by all means still in practise and I will be for all my life in catering. Cooking isn’t something you can do instantly, it takes time, hard work, trial and error. Everyone can cook, but to cook well and wanting to do it as a career... you need passion.
Buie kitchen is the focus of my few years watching and reading the likes of Anthony Bourdain, David Chang, Renne Redzepi, Tom Kerridge, Tom Kitchin, Tommy Banks etc... Taking what skills I have already and what I’ve learnt over the few years of my career and applying them to food I want to cook for people.
My grandad (who’s a Scott) gave me a lot of inspiration on Scottish food and my dad (not at all a Scott) gave me the inspiration to cook being classically French trained himself.
I wanted to do something different from everyone else. You don’t hear about many Scottish themed streetfood places so why not give it a go? After all you should take as many opportunities as life gives you. It was only made possible whilst chatting to a few friends and regulars at the pub I’ve been Head Chef of for 4 years. They told me I should go for it, give it my all and enjoy it.
I’m only young and very new to this industry still and I know my menu will only evolve overtime whilst I’m still learning.
My food I look at and think, it’s fun and different. It’s full of flavour and true to Scottish cuisine. Taking classic peppery flavours and rich foods to hopefully a different dimension.
Grab a bite and see for yourselves, not everyone’s gonna like my food and that’s the way it is, but you’re not going to know unless you try. Basically the moral to my career in a way 😂
