Last night’s seasonal menu for a local client’s dinner party in Stock heavily featured game…we starting with Wood Pigeon With Hazelnuts, Carrot Puree And Bok Choi; to follow…Pheasant Ballotine, Quince, Collard greens, Sage Bread Sauce & Madeira Sauce; and to finish…Chocolate And Griottine Fondant, Cherry Yoghurt Ice Cream. We're cooking super slow roasted shoulder of lamb with rosemary, garlic and anchovy and a rich lamb gravy (or Spinach, Feta & Lemon Filo Pie (v)) and serving it with roast potatoes, spring greens, glazed carrots, parsnips and turnips...For dessert...a spiced Apple, Pear and Raisin Crumble, custard & vanilla ice cream. For our January Feast Night at Billericay Brewery on Wednesday 15th we are celebrating the pheasant. It will be gently pan-fried and served on sliced buttered sprouts alongside a parsnip puree, pickled blackberries, a crispy leg croquette and a rich madeira jus. Alternatively, Roasted butternut squash with lentils and dolcelatte is the vegetarian option.
