With so many weddings postponed in the past few years, 2022 has truly been the year of weddings. Apologies in advance for the uploading of so many wedding posts in the next few days but life has been rather busy and I’ve neglected my FB page. It also turns out that my Instagram posts have been sharing to my personal not catering FB page, so my poor friends have been bombarded with foodie photos 🤦🏼‍♀️

This for me, sums up everything that’s wonderful about this time of year. A delicious homemade cake using foraged blackberries picked on a delightful sunny afternoon from local hedgerows & delicious apples that a lovely friend gave me. Has anyone else’s summer passed by in a bit of a blur? I wonder how best to sum up the past 6 weeks. Do I do it in terms of events ? 10 in 6 weeks including 4 weddings & 3 funerals…almost a film some would say. Do I count it in terms of the number of guests I fed, well in hindsight that’s darn scary …
Or in terms of how many washing machine cycles cleaning aprons & cloths, a rough guess being at least 30 plus countless trips to the shops & many hours of prep work whilst trying to ‘encourage’ teens off the Xbox. Or is it in the number of brownies made & canapés prepared? But possibly it’s best summed up with the lovely thank you messages I’ve received and the joy it gives me being part of people’s celebrations & seeing them enjoy my food. I think I’ll settle for this and take a few weeks off to recover.

It was a hot, hot day last Saturday but these guys and the rest of my team were amazing. The kitchen hit 40 degrees at one point with the blazing sun & industrial ovens adding to the heat. But my wonderful girls & boy worked through it with a typical British sense of humour & lots of water!

Proving that vegan sandwiches don’t need to be just lettuce stuck between two pieces of bread. I served the vegan guests the following fillings:
Guacamole, avocado & tomato
Curried Coronation cauliflower
Houmous & rocket
Vegan cheese & caramelised onion chutney

This is the official 16th birthday cake showing teamwork at its best. I made the cake and the birthday girl offered to decorate it saying she’d do a better job and she wasn’t wrong. She turned 3 Victoria sponges into this biscoff extravaganza! Looks like I may be able to retire soon ?! 😉❤️🎂

As promised here is the recipe for the Orange & Honey Polenta Cake

200g butter, softened
220g caster sugar
3 large eggs
280g ground almonds
150g polenta
1 tsp baking powder
2 large oranges, juice of, & zest

Cake syrup
1 lemon, juiced
1 orange, juiced
100ml runny honey

Icing
75g softened butter
130 icing sugar, sieved
300g cream cheese
Zest of 1 orange

Preheat oven to 160 fan. Grease & line 2 x 8inch cake tins.
Cream the butter & sugar until light & fluffy. Add 1 egg at a time, mixing each well, before adding the next egg.
In a separate bowl, mix the dry ingredients & orange zest, then fold into the other mixture along with the juice of the oranges.
Divide between the tins & bake for approx 40 mins.
When cakes nearly cooked, make the syrup by warming the honey & juices in a small pan. Whilst cakes are still warm, make small holes in the cakes with a cocktail stick. Drizzle the syrup over the cakes. Leave the cakes to cool in the tins.
To make the icing, cream the butter until light & fluffy, add the sieved icing sugar, mix until combined then gently whisk in the cream cheese & orange zest.
Ice the cake once cool, then stand back & admire your handiwork and then enjoy a slice or two!

I was asked if I could create a drop off dinner as a surprise gift to celebrate a special chap’s 75 birthday next Saturday (he’s not on Instagram so don’t worry I’m not spoiling the surprise!)
So it got me thinking that I could share the love and offer this out to others who may fancy spoiling someone next Saturday or just fancies a night off from cooking 😊DM or give me a call by Wednesday if you’re interested xx
