🍧 Mochi is a Japanese stretchy and chewy dessert.
⠀
When it comes to Japanese traditional desserts, Mochi is always the answer. This traditional dessert is also known as “rice cake” that has been enjoyed in Japan for centuries. For many centuries in Asia mochi traditionally were made with azuko bean jam or sweetened bean paste as a filling.
⠀
Well! Indeed, this dessert has been adapted and modernised to a completely different level. It is still a new dessert and it is not like the jam tarts and custards creams we are used to.
Although, the rice dough had remained similar to the traditional preparation.
⠀
We are always keep experimenting with the flavours and the ingredients, trying to create something exiting and new and as a result some great masterpieces are emerging. Cake maker’s ultimate goal is to create the best for you!

Being creative is a part of the job 👩🏻‍🎨👩🏻‍🍳

Some people may think that to make a cake it’s easy and it doesn’t take long.
⠀
Yes, to bake a cake is the easiest part in a process of making the cake! But what about the fillings, cream, decorations?
I’m not going to bore you with resting and chilling times 😅
⠀
Technically, you can make a cake in less than 3 hours. Unfortunately, decorating the cake in such haste is very stressful and the outcome will not be very professional.
⠀
On the other hand, most customers think their cakes are baked a day before the event. Right? 😅
⠀
Would you be surprised if I tell you that to make a cake it takes about 2-3 days 😱
⠀
Who wants to see cracked or slipped off to the side cake? 😂😅
⠀
And decoration of the cake is completely different dimension as possibilities are literally endless 🥳
⠀
I’m not a painter or an artist but you have to have a creative side to be able to decorate cakes 🎂
⠀
With this cake I have certainly felt this creative side and I think it turned out great 😊

Brush strokes with colourful vegan buttercream reminded me of a painter’s pallet 👩🏻‍🎨

Loved creating this cake. Very classic flavour of vanilla sponges and strawberry compote with a twists of cream cheese frosting 🧁

Feather like decorations are made from edible wafer paper. So light and elegant 🪶

🌺A flower cannot blossom without sunshine, and a man cannot live without love.🌸♥️

It’s been a while since my last flower cake but it’s like riding a bike, you're able to pick it back up after a long break, as long as you once had learned it well. 😍

Anyways, just wanted to share this beautiful cake with you. The flowers are hand piped and edible, made with cream cheese so they taste even better than buttercream 😍

It reminds me of long summer days, full of sunshine and lengthy walks in the park🌞

Pushing to the limit

“Never stop believing in yourself and what you can accomplish!”

I have to admit this the is hardest cake I’ve ever done! 😅
⠀
The idea was to create a stacked weight plates for the dumbbells 💪 but to avoid fondant icing as I don’t do fondant covered cakes 🎂
⠀
So this cake was hand carved to imitate pile of weight dumbbells and then was covered with chocolate ganache 😅
⠀
Sounds easy🤟🏻, when I say it, but it was the hardest thing I have ever done with the cakes!!! 😱
⠀
The most masculine cake in my baking experience 💪🏻 dark chocolate with raspberry filling and chocolate ganache 🍫
⠀
Have I nailed it? 😉

Of course you can buy ready cake at the supermarket but will it be the way you like it? 🧐

That’s were my job as a cake fairy 🧚🏻‍♀️ starts, it can be pretty much anything you like, with its own limitations of course. Everyone have their limits, so am I 😅

All of my cakes can be personalised, whether it’s personal message written on the cake or edible picture or some special shape or colour or even specific flavour, or dietary requirements 🌈

Holidaymakers in disguise

Imagine the scene - you are lying on a beautiful beach somewhere hot and exotic - you have worked hard all year for this and all those extra nights and shifts now somehow seem worth it. 🤩

Although this cake was made a while back but it’s brings back these memories of hot summer days abroad🌊 ☀️ surfing the ocean or the bars and restaurants 🥂
⠀
However, 🥺 many of us won’t have a holiday abroad 🏖 we can only dream of beautiful white sandy beaches and warm blue waters of Cyprus or Spain.
⠀
But don’t despair! Fingers crossed we will have a good summer, here at 🇬🇧 UK.
⠀
We still can put up our inflatables and parasols. 🧘🏻‍♀️
⠀
And who said we can’t have a cocktail or two 🍸at the pleasure of our own garden? 🪴

I have always admired bakers who are trying to creating something different and not stopping at just classics.

Have you ever seen Geode cakes aka crystal cakes?
⠀
First I’ve seen these cakes probably quite few years back. What amazed me, the uniqueness and beauty of the design. A sparkling ✨ glory
⠀
Although, the geode cake trend is rocking our world for a while now, but still it isn’t hard to see why. 🤩
⠀
The process of designing a geode cake is very similar to a traditional cake, with the exception of adding additional support to the cavern, once the cake is carved away. The edible geode is made from a combination of granulated sugar and rock candy.
⠀
Pull off this stunning design was always one of my aspirations and opportunity have knocked! I was asked to create one 🤩
