These nutrient-packed Pea and Quinoa Patties are a delicious way to add a burst of wholesome goodness to mealtimes! πΏπ
Ingredients:
β’ 1 cup cooked quinoa
β’ 1 cup peas
β’ 1/2 cup finely grated carrot
β’ 1/4 cup finely chopped red bell pepper
β’ 1/4 cup chopped fresh parsley
β’ 1/4 cup whole wheat breadcrumbs
β’ 2 cloves garlic, minced
β’ 1 teaspoon ground cumin
β’ 1/2 teaspoon paprika
β’ 1 egg (or flaxseed egg for a vegan option)
β’ Cooking spray for baking
Instructions:
1. Preheat and Prep:
β’ Preheat your oven to 190Β°.
β’ In a large bowl, combine cooked quinoa, peas, grated carrot, chopped red bell pepper, fresh parsley, whole wheat breadcrumbs, minced garlic, ground cumin, paprika, salt, and pepper.
2. Bind Together:
β’ Add the egg (or flaxseed egg for a vegan alternative) to the mixture. Stir until everything is well combined.
3. Shape and Bake:
β’ Form the mixture into patties and place them on a baking sheet lined with parchment paper.
β’ Lightly spray the patties with cooking spray to help them crisp up in the oven.
4. Bake to Perfection:
β’ Bake in the preheated oven for 20-25 minutes, flipping halfway through, or until the patties are golden brown and cooked through.
5. Serve with Love:
Allow the patties to cool slightly before serving. Serve with a cool yoghurt and mint dip for a refreshing dip.
