If today isn’t a day that is crying out for a pie then I don’t know what is! This Keralan seafood pie can be filled with any seafood that you have in the fridge (haddock, squid, mussels) and is the ideal winter warmer with a golden pastry topping that keeps you coming back for more. 🐟👌
RECIPE:
- Slice 2 x green chillis
- Cut a thumb-sized piece of ginger into thin strips
- Thinly slice half an onion
- Splash oil into the pan, throw in the chilli, ginger, and a handful of curry leaves and leave to sweat for 2-3 mins
- Add a pinch of turmeric, salt and half a tin of coconut milk and cook for 3-5 mins more, until it becomes thick
- Add in your raw seafood and stir, binding the mixture together
- Cover with puff pastry and bake in the oven (180C) for 15-18 mins, until the mixture is bubbling and the pastry is golden
There you have it!
