But this is the reality of catering.

Unless you work in a fully staffed state of the art kitchen, it is the following...

It's making sure that the kitchen is maintained, that the cleaning duties are done, that your records are in check, that your food practices are safe and effective. Its managing your stock, its keeping inventive, its taking the critiques, it's missing the luxuries that your mates enjoy most evening, it's years of this. It's also much much more little things that each day can grate and grind on you over time

It is often monotonous, soul destroying, greasy, tense.

You have to be a certain type of person to stick it out for life.

But it is like no other, it is instinctive, creative, mesmerising, rewarding. You have the opportunity to create a lasting memory in someone's life, 100's of times a day. It's putting something on a plate, thinking how have I done that, then wandering how to make it even better!

To all the chefs out there, I salute you all!!!

Messy paws time

Also got to spoke to a resident near the park, they have an amazing fig tree. So much veg and fruit growing in the back gardens. Would love to be able to source from community growers.

What is your most favourite / least favourite part of being in the kitchen?
The most common words I use in the kitchen has surely got to be
'I hate pastry'. Usually with an expletif in there too...

I say it, but it is an absolute blatant lie. I love it, but wish I had more time and skill to be able to add the finesse that so many great chefs have. Pastry is art, and I'm not a very good artist.

Here we have a couple puddings and the baking of the Steak and Stilton pie that we had on our ladies and and gents lunch club. Coincidence with too apparently.

There is one pudding that I do confess to enjoy making. A Creme Brulee. Simple, so amazing when done properly.
Using Vanilla and West Country cream, along with local free range eggs. Simple (though over caramelised for the tester)

I don't really have a style of cooking, but it is definitely more on the side of what is happier than healthier. Which is why when eating for myself, I have to introduce balance. I love cooking with rich foods, but I'd lose sight of my toes in no time.

Most chefs I worked with, when in the kitchen, fill their diets with 'if its' kind of meals. I have often stuffed my face with scraps, eating from a plastic jug at the end of service

What do you do to keep healthy?

fillet salad last night, local honey, seasoning, nuts and radish for my better half and I. A couple baked slices of beetroot and sultana crisp beads too

Last nights Valentines menu was a big success. I enjoy doing different dishes using classic techniques and different techniques. It's nice to have to think of these ideas, with input from the team and the customers, whilst enjoying some simple necessities too.

We provide a set menu and we are given a pre order.

Curried Smoked Haddock Scotch Egg
Pan Roast Salmon Fillet, Capers, new potatoes, prawn and dill white wine, charred lemon
Roast Beechridge chicken breast, cheddar and chive potato cake, Sage and Cider cream sauce
