And we have been craving for a long time to see our friends in their new venue on the seaside, who are doing incredibly delicious Mexican cuisine .

Chef Daniel has selected quite a lots of plant based dishes . You will be amazed .

Try the mayan hummus , sikil pak , or the enmoladas , with delicious homemade Mole by Head Chef Daniel . Actually try all the dishes , so so so authentic. Just tell Chef you are vegan , and he will do it for you also.

My virgin paloma cocktails was also ๐Ÿ’ฃ and yes yes they do have quality mezcal and tequila .

Tlaloc has been rewarded the best 10 restaurant of Brighton . Ok , go now !

It has been such a ride since the last time we opened last December . Marie , was not sure what was going on with her health lately and thanks God , we found out it was โ€œjust โ€œ pregnancy . Ahaha

We are sadly closing our kitchen for good as we are planning our journey back to Mexico , with a nice stop in France for giving birth to our baby . We canโ€™t say how much we are grateful for such welcoming and giving we received from you folks . And know and remember that our casa is also your casa . Honesty , pop us a dm , as we will try to keep our insta opened , and would be a pleasure to keep in touch with you here , or for a visit โค๏ธโ€๐Ÿ”ฅ

โ€œNixtamalized Corn Flourโ€ is NOT fresh nixtamal

Tortillas are made from nixtamalized
Corn . Long process from traditions. Actually part of the UNESCO heritage.

Though, to shorten times of preparation and as priorities changed, tortillas are now more commonly made from nixtamalized corn Flour, a recipe of the traditional tortilla to answer a global demand by an industry.

Sadly, during this process, the fibres , are lost and nutritional benefits too. Not even talking about the aroma.

At Bendito Maiz , we have respect for the Mexican culture of Nixtamal, by continuing this ancient process .

Hello !!!
We want to introduce us to you . Bendito is composed of Erik , mexicano from Guadalajara , and me ( marie ) Filipino- french .We are a married couple .

We started bendito in 2019 , for a few reasons .
In 2016, I started a business in Mexico with My family , and i really wanted to veganize it ,but I was in a dead-end. I kept my dream on hold.
In Brighton, we were both missing Mexico a lot , and also the food. So we spent our free times cooking Erikโ€™s mum and his auntyโ€™s recipes.
We started with the tortillas ,
And it was a long journey in the desert . Not easy at all !!
We participated back then, to our first markets and events. How difficult was our brand to work with ( so much prep )and how obsessed we were with our food. We were not sure if we were doing it right .But we knew one thing for sure, we had to make it happened to show how foods taste good without harming any animals ๐Ÿฎ๐Ÿท๐Ÿฅ
Then lockdown started, tough one.
In November 2020 , Rachel and John from opened their kitchen for us , and we were so blessed to have a place to cook . We are so grateful to them ๐Ÿ’“
Since then we have been cooking , and well , as a married couple it has not been easy. Many times I planned giving up, but my vegan heart could not let me do it.
Saying thank you is not enough to express our gratitude to you all , who have come and try our food in the difficult time , and waited long time sometimes for your order.

You are making this real and a more plant based Brighton is possible thanks to your support .
Also Maybe you are not vegan, but you do like our food. And it is cool ๐Ÿ˜Š

Have a wonderfull week end/holidays. We might have some time off in August from our kitchen. We will still run some events .Weโ€™ll keep you updated .
