“Nixtamalized Corn Flour” is NOT fresh nixtamal
Tortillas are made from nixtamalized
Corn . Long process from traditions. Actually part of the UNESCO heritage.
Though, to shorten times of preparation and as priorities changed, tortillas are now more commonly made from nixtamalized corn Flour, a recipe of the traditional tortilla to answer a global demand by an industry.
Sadly, during this process, the fibres , are lost and nutritional benefits too. Not even talking about the aroma.
At Bendito Maiz , we have respect for the Mexican culture of Nixtamal, by continuing this ancient process .

🌽White corn tortilla made with kernels produced from a small farm in Guerrero , Mx.
I added wild oregano that my forager friend @wildgardenemporium brought that day .
Each tortilla I made from this batch was giving me a lot of nostalgy . Mexico we miss you and we pray one day we can reunite again with family and friends . In the meantime, let’s enjoy UK ♥️
