A sausage Insight……

Tom uncovers the secret to crafting an absolutely amazing Pork Sausage!

Having learnt his craft 40 years ago as a schoolboy in the school holidays at Barwells and Dixons butchers of Bury St Edmunds...

First things first, using good quality pork is key. With just the right amount of fat to keep the sausages moist and flavourful, typically, a ratio of 85% lean meat and 15% fat.

Next, seasoning is crucial! The right blend of herbs and spices is what gives British sausages their distinctive flavour.

Now, I know what you're thinking - why is the seasoning so important when it's only 2.5% of your sausage? Well, that 2.5% can make all the difference in creating an impactful and unforgettable flavour experience!

Texture is another important aspect to consider. The perfect Sausage should have a succulent and juicy bite. Achieving this requires a good mixing method of meat, seasoning, bread rusk and water. Typically, add seasoning first to meat and mix until sticky, then add other ingredients.

Now, let's talk about the art of sausage-making. Filling the casing is where the magic happens. Take your time to select the best casings and ensure when filling you have an even distribution of the meat mixture, avoiding any air pockets. This will result in a uniform and pleasing sausage bite!

All our sausages are carefully made by Tom using only the best cuts of pork and using only natural casings, not synthetic ones.
We have a lovely hot sauce today to compliment your perfect hotdog!!

We're all set up and ready in arc shopping centre today. Our famous Traditional sausages are on offer along with 'The Hog Roast Sausage' (Bramley Apple, Sage and Red Onion).
All Handmade by us and the onions hand chopped by us too.

We say goodbye to the legend that is Alf who has always looked after us in arc shopping centre, we made him a sausage, egg, bacon, cheese and onion baguette for his final day before retirement.
We can't resist this joke Alf, - there's a shelf with Alf one end and our own Elf on the other end
