We're all set for the most lushest Thai Yellow Chicken Curry yet. FACT.
We had this on the cards to serve up last week, but clearly the snow had other plans. So we had to freeze that batch of made-from-scratch curry paste and then recreated another flavour-packing batch today - as you die hard Fusion Foody fans will know, our stuff is fresh, never frozen!
We're so delighted with the result, the colours, the flavours, the freshness, the aesthetics, the scents, and we certainly hope you will be too!!!

1. Murgh Malai Karahi / White Chicken Karahi: Tender chunks of chicken breast cooked in yogurt with signature herbs and spices, and served with chickpea rice/pilau and cucumber raita - traditionally a curry base is made up of onions, tomatoes and red chillies but not this dish. Without any of those ingredients, this is a yogurt based dish with fresh ginger and garlic, freshly roasted and milled spices with green chillies to give you a completely different flavour dynamic!
2. Gobi Kofta / White Cabbage Kofta Curry: These delicious, meatfree meatballs are tossed in a spiced red sauce, and served with pilau and raita. White cabbage isn't typically a go-to vegetable in South Asian cuisine, but it's a brilliant component for a super tasty, super juicy and super nutritious veggie meatball!
