Nick has been at the London School of Coffee this week, learning the art and science of professional coffee roasting! ☕️
He’ll be launching a high-street coffee brand in Cardiff later this year and wanted to get a better understanding of coffee. His goal is to become an expert in the field and deliver the best possible experience to future customers.

Gemma, our Chef Manager in Curnow, was recently interviewed by a student about diet and healthy eating for the Cornwall Youth News. 🥬
She shared insights on how we promote healthy eating through the meals we prepare in schools and explained why moderation is essential to maintaining a balanced diet.

As another year draws to a close and a new one begins, I find myself reflecting on just how much has happened.
This past year has been another chapter in the ongoing journey of running a business. The word “company” comes from the Latin “com,” meaning “together,” and this year, more than ever, I’ve realised just how true that is. I couldn’t have done this without the incredible support and collaboration of my team.
When I started this business over 9 years ago, I truly believed that if I just worked hard enough, the same way I’ve always approached everything since I was 15, I could turn any dream into reality. I was driven, eager to bring my sometimes ambitious ideas to life. But what I didn’t fully understand at the time was that all those dreams, those sleepless nights of excitement, couldn’t have come to fruition without the hard work, dedication, and passion of the people around me.
Over these years, I’ve had the privilege of working with some of the most amazing people I’ve ever met, and I’m so incredibly proud of my team — past and present — who have stood by me on this journey.
In 2025, Cleverchefs will turn 10. Ten years in business, growing into a national caterer with a reputation for excellence, especially among foodies. It’s something I’m truly proud of, and it’s been an incredible ride.
As we look ahead, my focus in 2025 is on my people, I want to ensure that I’m doing everything I can to make their lives better, whether it’s offering new opportunities within Cleverchefs group or helping them grow individually. My goal is to build the happiest, most fulfilled team in the industry.
As both a chef and an entrepreneur, I’ll admit I haven’t always focused enough on the people who work with me. But 2025 will mark a shift in that. After all, what got me here, wont get me there.

We have launched our new independent school brand at Leehurst Swan which is CULTURE.
