The brief was wines from South Africa, California and Australia โWhat a mixโ
I took inspiration from South Africaโs palate with some smoked and barrel aged cheese, spicy and sweet chutney, tropical fruits and biltong
Then a hint of California with American cheese & cured meat
Finishing off with some fresh fruits, olives and pickles for the Australian touch ๐
