Give it up for the fungi! 👏🏽

It’s prime time for mushrooms right now my friends and one of my favourite serving suggestions is:

Bake the portobellos bottoms up, drizzle in olive oil, drench in white wine and top with thyme and slice garlic, then bake covered in foil for 25 mins.

OR….

Fry them hard on a high heat with minimal oil. Tossing continuously.

This stops mushrooms getting all soggy.

Then when they’re cooked, chuck in a teaspoon of tamari, some black pepper and some fresh tarragon. BAM.

Can’t quite believe how good this year’s been. Huge thanks to everyone who’s had me cooking at their retreats, private gigs, or just eaten and enjoyed my food. You’re all legends.

Food for the soul 🫶🏽

As it’s starting to get colder outside, I’ve been yearning for some sweet plates to bring some comforting goodness. Here’s an old friend of mine ~ Chocolate mousse. H**p tea gel. Cardamom brittle. Powdered beetroot.
And a cheeky layer of crushed ginger biccies. Obviously phenom-peng.

When I create a menu for a retreat or private dining experience, every dish has a purpose. I don’t just focus on presentation – I focus on how food makes you feel. Each ingredient is selected for its nutritional value and how it supports the body’s needs throughout your retreat. Whether the aim is to restore energy, aid digestion, or promote calm, there’s a considered science behind every plate. Food should not only delight the senses but also nourish the body in tune with its natural rhythm.
