TOM KHAA KAI MUSSELS

Quick, simple & flavour packed!
An easy showstopper. Always a winner around The Greedy Table.

Recipe
Crush and bruise 3 lemon grass stalks, 6cm of ginger & 4 shallots.
Put them into a wok with 2 tins of coconut milk and bring to a slow boil.
Add a chicken stock cube, 3 tbsp fish sauce & 2 tbsp sugar.
Add lime zest & juice of one lime, 10 mukrut lime leaves & 3 sliced red chillis.
Season to taste.
Turn up the heat a little and add cleaned mussels. Put on a lid until the mussels have cooked - once they have opened wide (usually between 3-7 minutes)
Finish with chopped coriander & serve.

A couple of experimental dishes using restricted equipment, but they both turned up trumps!

I wasn’t going to cook whilst on holiday, but with this produce and view, I couldn’t resist! Looking forward to getting back into the kitchen asap!
