What a pleasure it was to cook at for an enchanted circus themed charity dinner!

Chesil smoked trout, tiger prawns, Portland crab, and Chesil smoked mackerel served with a refreshing lemon, dill, and chive mayo.

A rich and creamy roast butternut squash, shallot, and pea risotto

Dorset fillet of beef , beef brisket bon bon, served with classic béarnaise and bordelaise sauces, autumn vegetables, and a crispy potato galette.
