I've been terrible with posting. So busy with work and life, just always forget to do something. Also got terrible at remembering to take pictures.
Anyways, here is 2 I did take recently for a lovely wedding. Chicken cornet canape and a sharing dessert of Strawberry and Gin Trifle

Happy New Year to everyone.
2024 sees my little catering company turning 8. Something I never imagined when I set off back in 2016. To celebrate this, across the year, I will be running 8 different competitions with that making 8 chances to win a variety of prizes.

Last bit of food prep done. That's me saying goodbye to Brown Goose for 2023. It's been an amazing year with some of the highest highs, but it's also been a year where I've learned to take the L's as well.
I want to say a massive thank you to each and every one of my customers and guests both past and future. 2024 has plenty lined up

Today I'm heading off to Oslo 🇳🇴 to visit the Bislett Stadium. On Saturday morning from 10am, I'll be spending 24hrs running round the warmup trap underneath. If you want to follow how I get on is where I'm keeping everyone updated. I shall spend the next week, not dealing with emails etc. See you on the other side x

We keep getting busier and busier, so I'm looking for more casual staff for the next few months.
£12.50/hour. No shift longer than 6 hours. Food on duty.

Let's talk about this Blackberry and Apple Trifle. Weighing in at approximately 11kg. I can safely say, its the largest dessert I've ever constructed in terms of weight. Blackberry jelly made from poaching them. Apple Jelly with cooked apples. Crème Patisserie made with double cream, topped with Whipped cream and poached fruits. Enjoyed making this

**Sound required for full effect** I love to make and churn my own Ice Creams. There's something extremely fulfilling about creating different flavours and seeing it start to finish..... But!!!! My gosh, this noise is relentless. Even my wife refuses to be in the house when I do it!
To avoid anyone voting after the letter came out, I recorded this at around 7.10pm. The letter pulled out was R. I had to write it back to front when I realised it was wrong way round and my wife said it looked like a 12!!! Evidence of the pre cut sheet as well. Ingredient list and potential menu coming later. Final draw at 6pm tomorrow

A massive congratulations to Julia Foggo who won our Christmas menu like and share competition. She and 5 friends sat down to enjoy a 4 course meal cooked in the comfort of their home. So while they relaxed we served them up a Smoked Piddle Valley Chicken Salad, Braised Beef Cheeks and a steamed Rum and Raisin sponge pudding. We had a thoroughly great time serving them and hope they enjoyed it as much as we did.
Thanks to Julie Burden for hosting the canapé party for her and her friends last night. We hope they had as much fun as we did. Her and her friends enjoyed 12 different hand crafted canapés including Pork Belly and Purple Carrot, Goats Cheese "Waldorf", Smoke Chicken Tartlet amongst others. Due to the unfortunate weather in Weymouth today, we've had to cancel the canapé party we were due to host tonight. However, the good news, they will be available to try to anyone who is down on the Harbourside in Weymouth tomorrow. No.4 restaurant will have them on their stand at Waterfest Weymouth. (We won't be there due to the CrossFit Weymouth BBQ we are hosting). Enjoy if you get the chance
We had the pleasure of hosting a canapé party last night for our 200 like competition winner, Kerry Stone. Kerry, her husband Steve and all of her friends were an absolute pleasure to cook for. They had 12 different canapés ranging from Watermelon and Goats Cheese, Portland Crab Cornets through to Satay Rabbit Skewers.
