Top Tip Tuesday - Don’t bin chicken bones - RECIPE BELOW
Instead turn them into a delicious homemade soup! Here’s how:
🪄 Step 1: Make the Stock
• Pick off any leftover chicken and set aside.
• Cover the bones with cold water, add a couple of peppercorns, a crushed garlic clove, and a piece of ginger.
• Simmer gently for 45 minutes, then strain.
🍲 Step 2: Make Chicken & Sweetcorn Soup
You’ll need:
• A bunch of spring onions, finely sliced
• 1 cup of sweetcorn
• 3 tbsp rice flour mixed with 6 tbsp water (or cornflour)
• Chicken, finely sliced
• 1 tbsp light soy sauce
• 1 egg, lightly beaten
✨ Method:
1. Strain your stock and season.
2. Add the sweetcorn, spring onions, and chicken. Bring to a simmer.
3. Stir in the rice flour mix to slightly thicken.
4. Swirl the pan, then pour the beaten egg in slowly while spinning the liquid for that classic soup texture.
🌿 Garnish with spring onions and enjoy a warming, wholesome bowl of goodness!

Add onions, garlic, and a splash of red wine or ale for depth, then toss in hearty winter vegetables like carrots, parsnips, and swede. Let it simmer low and slow with beef stock, fresh thyme, and a bay leaf until the beef is melt-in-your-mouth tender.

• Mashed Root Veggies: Swap out regular mash for a mix of potato, turnip, and parsnip mashed together with a knob of butter and a splash of cream.

Got a fridge full of leftover Brussels sprouts from Christmas? Don’t bin them—turn them into something fabulous!
🎉 BRUSSELS SPROUT KIMCHI 🎉
Here’s how to whip up this zingy, delicious recipe that will brighten up your meals for weeks:
Ingredients:
• 200g Brussels sprouts (finely shredded)
• 1 bunch spring onions (finely sliced)
• 1 carrot (grated)
• 1 red chilli (finely chopped)
• 1 bunch coriander (finely chopped – top tip: chop once finely! Over-chopping will make it mushy and taste muddy)
• 4 cloves garlic (finely chopped)
• 4” ginger (grated or finely chopped)
• 100ml light soy sauce
• 40ml sesame oil
Method:
Mix everything together, pop it into a sealed jar, and store it in your fridge. This kimchi will last for weeks, developing even more flavour over time!
Serving Suggestions:
• Add a dollop alongside a perfectly seared steak or fish with jasmine rice 🍚
• Enjoy it as a tangy, spicy snack on its own—it’s seriously addictive!

Want to get the perfect zest for your recipes without making a mess? Here’s a quick and easy trick that’ll save you time and effort!
1️⃣ Place a sheet of greaseproof paper on your worktop.
2️⃣ Hold your grater at an angle over the paper.
3️⃣ Gently rub the citrus fruit (orange, lemon, lime—you name it!) against the fine side of the grater.
4️⃣ The zest will fall neatly onto the greaseproof paper, ready for you to scoop up and sprinkle into your recipe!
