N A K E D in January.

A beautiful simple Eton Mess birthday cake, filled with raspberries, rose and vanilla bean, layered with Chantilly cream, meringues and raspberries.

Keeping it natural with the use of organic eggs, butter, flour, beetroot powder, edible flowers, our homegrown raspberries, (the flowers are grown and pressed here at home), fair trade chocolate and sustainabley sourced vanilla pods.

Its Citrus season...Italian Organic Bergamot.

It's not a lemon or an orange, but has elements of both with its flavour, juice and zest.

Floral, think Earl Grey (Bergamot) tea, warm spice. Adding another option to citrus in cake sponges, curds and fillings.

It's been a real pleasure in creating some wonderful bespoke cakes AND catering for some enjoyable events and clients this year. I really am looking forward to getting creative in 2025 and serving up a lot of happiness and joy.

Hello, and welcome to those who've recently found my page and joined me.

I thought I'd do a photo dump of this weekend's work, focusing on my private chef mode rather than bespoke cakes. (It seems there are no birthdays or weddings in the winter months....uum? I'd love to hear from you if you are game?)

My weekend started early on Friday morning, filling the kitchen with amazing smells whilst baking organic wholemeal seeded breads for my regular Friday bread munching customers.

Then into the weekend, my apron securely tied as I became focused on preparing and cooking for guests

Gin and juniper gravlax
Cullen Skink
Sirloin of beef
Treacle cured venison
Toffee Apple and Pear crumble
Rhubarb orange and vanilla crème brulée
...not to mention all the extra tasty morsels that accompany each dish. Buttermilk pancakes, basil spinach oil, pickled beetroot, homemade toffee, caramelised pear wafers, mini meringues, lavender mint lemon shortbread.

It was a great weekend, full of satisfaction all round.

On Thursday evening I as Celebration Cakes by Rebecca Grace Banks doned my apron using my chef skills as i was invited by the Southern Upland's Moorland Group to be one of two chefs to their charity fund raising event of game awareness.

All proceeds go to The Country Food Trust = feeding people in need.

I had to come up with 3 game recipes, to cook and discuss during my demonstration and to serve as tasters to the audience of 70 throughout the evening.

I stepped out of my comfort zone, not with the cooking but with the 'demonstration and chit chat', having eyes and ears tuned in on me.... this included family and friends too who'd come along to support the cause and me. It was a huge success.

I prepped and served the following game dishes:-

Carpaccio of Treacle Cured Venison, Orange Rosemary Dressing, Horseradish Crème Fraîche.

Pheasant Tandoori Pittas, Pomegranate, Tzatziki.

Partridge Legs & Breasts, Pancetta, Chestnut Mushrooms, Cream & White Wine, Potato Rosti

A very H A P P Y 1 8 t h B I R T H D A Y to Constance, aka 'Pickles'.

This brief with SNOOPY, MIFFY & GARFIELD was a fun nod from her parents, together with oodles of love.

Turning 18 is a moment when you are standing on the threshold of childhood and adulthood, quite often looking back at your past with nostalgia while facing the future with anticipation and hope...the transition into adulthood!

Oh boy I'm 54... it still seems scary but I'm having a great time along the way.

Thank you for this brief, it was fun and fiddly. Creating edible handcrafted wafer paper figurines, party poppers, confetti and balloons, all on top of 4 layers of red velvet sponge filled with cream cheese and vanilla Swiss meringue buttercream.

Congratulations to Courtney and Jack as they celebrated their wedding on 26th October 2024...magical, seasonal and fun.

Autumnal and Halloween touches sneaked in, starting from pumpkins at the foot of the lampposts up the driveway on the approach to Mansfield House Hotel, to their colourful table decorations of pumpkins and blooms in an array of autumnal colours.

With their input of ideas, a cake design was chosen from a couple of my sketches ....then, it came to life!

The bottom tier of chocolate fudge filled with chocolate crémeux and vanilla SMBC.

Top tier of Madeira cake filled with a subtle citrus whipped buttercream.

Painted with natural pigments as a colourful blended watercolour wash, decorated with edible garnishes of tempered chocolate ghosts, crafted wafer paper lace and rice paper sails and mini Madeira sponge pumpkins.

Inspired by Georges Seurat - La Luzerne, I took my hand to pointillism for this birthday cake design.

Layers of dots of primary colours and ghostly hues which eventually cover the canvas giving me a design that 'pops' as it is a birthday cake after all!

Finished with a delicate wafer paper quill design.

Coconut, lime and cardamom sponge, lime and vanilla bean SMBC, chocolate ganache.

CONGRATULATIONS ❤️ to Emma and Chris for your wedding day last Saturday 14th September 2024!

I like to capture the true tones of the cakes I make in a photograph once I've set up. But I had problems with this beauty as the room was decorated in serene colours of which my work was a compliment. Colours of cream, white, sage, cornflower, pea blue....totally in tune...I fulfilled their wishes with the design of their cake.

Organic ingredients lent itself to the bottom tier of chocolate Fudge Cake (made with chocolate rather than cocoa), filled with a dark chocolate crémeux & vanilla bean SMBC.

Top tiers x 2 of vanilla sponge, vanilla bean SMBC and strawberry compote.

Finished with a ganache, painted with watercolour natural pigments of sage, blue, cornflower.

Garnished with all edibles:- wafer paper, silver leaf, pinhead pearls and violas.

Tarte au Citron - garnished with Scottish berries, dried edible primroses, mini brulée meringues, lemon zest.

Chocolate Genoise - filled with chantilly cream and a fresh strawberry compote. Garnished with chocolate hearts, fresh mint, Scottish berries.
