Congratulations to Courtney and Jack as they celebrated their wedding @themansfieldhousehotel on 26th October 2024...magical, seasonal and fun.
Autumnal and Halloween touches sneaked in, starting from pumpkins at the foot of the lampposts up the driveway on the approach to Mansfield House Hotel, to their colourful table decorations of pumpkins and blooms in an array of autumnal colours.
With their input of ideas, a cake design was chosen from a couple of my sketches ....then, it came to life!
The bottom tier of chocolate fudge filled with chocolate crémeux and vanilla SMBC.
Top tier of Madeira cake filled with a subtle citrus whipped buttercream.
Painted with natural pigments as a colourful blended watercolour wash, decorated with edible garnishes of tempered chocolate ghosts, crafted wafer paper lace and rice paper sails and mini Madeira sponge pumpkins.

My holiday is over and I'm back in the 'saddle', enjoying the opportunity of being creative once again.
The garden, with thanks to the Scottish Borders 'tropical' climate of sun and rain is flourishing, so I had an endless choice of organic edible flowers for this bespoke 80th birthday cake.
My client's brief was:-
. Not to scream 80 years ✔️
. Natural (no bling) ✔️
. Tones of purple, pink and green✔️
. Food safe flowers rather than hand crafted wafer paper designs✔️
The florals I've used are supplied from our organic garden thanks to @theplotthickenstd4 Kevin Banks
An early August harvest of:- veronica, ameranth, rose, pink mallow, purple thistle, pea flower, aubergine flower, purple basil, physalis, and thyme.

Several hours work to produce 500 individual canapés for a private art exhibition.
First up, Rosemary and Parmesan Sablés - mouth watering as you just can't stop once you start!
Refreshing Mediterranean Kebabs.
Crisp and smooth (yes it's contradictory) Celeriac and Roasted Prosciutto Squares.
Rounding it off with Cucumber Cups, Mackerel Mousse, Strawberry's and Peppery Chives.

🎵The Pretenders, Brass in Pocket
Hello there, as promised here is a quick snippet and further information of last week's wedding cake for Hannah and Benji @Kippilaw House here in the Scottish Borders.
1. 'Option One'= I like to propose a couple of sketches to my clients to help them visualise their 'cake to be'...So, after an informal chit chat AND having gained some useful information I then put ink pen and pastels to paper, and let my interpretation spill.
2. Flavours = there is no limit! (But I'll not use Oreos or Biscoff). Think bolder and test your taste buds. I'm happy to test and invent, we're talking bespoke after all.
3. Natural pigments = A colour palette is huge even with natural pigments. Primary colours are the basis, they may be blended to achieve any colour and tone, it takes practice and patience.
4. Design = Your cake shall be different, a focal point, a piece to be admired. This staggered tiered cake is one of many elegant options.
5. Garnishes = All my garnishes are edible and food safe. I don't use any plastics, or manufactured elements. Everything on your cake is either hand made by me OR by nature. In this case Hannah and Benji asked for 'organic edible flowers/herbs'. Keeping the final design of their cake natural with a nod to 'wild'.

That was my clients brief for this fun, happy 'swing yer pants' kinda cake....she was a tall one, a great party piece for everyone to share!
Wafer paper flowers, natural pigments for colour and dried daisies....all edible!

Happy 1st of May...and what a lovely day as I have the day off work too!
Of course I was in and out of the kitchen but also enjoying the garden harvesting spring radishes to pickle for the pantry.
With the birds tweeting and sunshining, it was a great excuse for making a B R I O C H E and enjoying a picnic lunch.
