Snow everywhere but Edi (🥲) calls for soup: carrot turned tomato, I roasted some carrots, cherry tomatoes, and potatoes, before blending with some veg stock and adding coconut milk 🥥 it was at this point that I realised I’d made about one portion, so added some more stock, cream, and tomato paste. Finished it off with lots of chilli and ginger for immunity 😚✌️
