Fantastic day pairing small plates for FÌON 's Palomino themed pop-up wine bar at Radicibus yesterday.

Pictured here are pink grapefruit cured sea trout with dill creme freche and grapefruit gel, and an Angus rump tartare with smoked shallots and black garlic mayo.

After a move to Edinburgh we have decided to rebrand to focus on the nature of the work we will be doing here. Now we are 'Ithe' (Scots Gaelic for 'eat') and very excited for some upcoming events and collaborations.
