Pizza Perfection

Pizza is simple, only a handful of ingredients. So why is it so hard to get right? To make a truly great pizza, every detail - from proving the dough to the amount and application of tomato sauce - has to be perfect. Its not just food, it’s a passion.

It all starts with the dough. Pizza is quick to cook (about 90 seconds) but to get our doughs just right we prove them for a minimum of 36 hours. This slow proving technique requires minimal yeast quantities. The slower fermentation process creates a more complex flavour, helps with easier digestion and creates the all important gases that give the Neapolitan pizza it’s unique crust.

Then there’s the tomato sauce. The only tomatoes to use are San Marzano from Naples, grown under Mount Vesuvius for an intense flavour. The people in Pompeii got it right all those years ago: it’s rich and fertile land.

All our toppings are the finest we can source to create our traditional pizzas.
