A blend of @thebotanistgin, our house Silver Birch Vermouth and the liquor from lacto-fermented unripe figs.
Our house dry vermouth is made with a base of our own silver birch wine and various foraged botanical infusions all sourced within Scotland and lightly sweetened with local Scottish honey.

At the end of 2023 we renovated our Fallachan Kitchen into a unique Chefs Table dining location. Sitting on a communal table, guests are situated in the heart of our open kitchen, watching our chefs at work, enjoying a multi-course tasting experience, enjoying hyper-local, seasonal and wild produce.
Our new space is available for restaurant bookings on select dates every month, as well as private hire.
