We think that Pastiera dates back to the 16th century, when a nun from the San Gregorio Armeno nunnery wanted to make a dessert that encapsulated the symbolism of the resurrection.

She combined cooked wheat grains with eggs, ricotta cheese, sugar and the orange blossom flowers from the convent garden.

The resulting dessert was given to the aristocratic families, but the beautiful aromas were enjoyed by everyone as the cooking smells wafted around the area, giving comfort. They felt that the heavenly aroma was the testimony of the Lord's presence.

Pastiera is commonly enjoyed at Easter by Italian families, and we are making it again this year at our Dry Drayton bakery.

The cost is £40, and this provides 10/12 servings. You can let us know whether to collect on 17th, 18th or 19th April.
