Chocolate making intro
A very belated lock-down post!! This one is so great, and I decided it was a really good lock-down option since we are having to minimise our trips to the shops, so what do you do when you discover there is no chocolate in the house but nothing else will satisfy you?!!! 😖 Now you can make it yourself! Give it a try!:
15 minute Healthy Chocolate
Makes one slab
Recipe:
150g cocoa
50g cocoa butter and 100g coconut oil or,
150g coconut oil (virgin unrefined is best)
Approx. 3 tbsp honey or liquid sweetener depending on your personal taste
Pinch salt
Dash vanilla (optional)
Toppings or flavours (optional) eg. Chopped dried fruit/nuts, shredded coconut, salted caramel, maca powder, cocoa nibs, mint or orange oil
Method:
1.Place the cocoa powder and fat into a glass or metal bowl which fits over a saucepan of gently simmering water.
2. When you see the fat is nearly melted (about 5 mins) but still abit lumpy turn the heat off and whisk the mixture together, careful not to let it overheat and become too runny. Think viscous and gloopy 😋
3. When the residual heat has melted all the fat, add your liquid sweetener and whisk to allow it to fully combine and dissolve. Add any liquid flavours/oils at this point too
4. Prepare a baking tray with some baking paper if making a chocolate slab, or spray silicone moulds with oil if making individual chocolates
5. Only when the chocolate mixture is gloopy (if you have overheated it just wait for it to cool) should you poor the chocolate into moulds/tray, otherwise the sweetener will settle to the base of the poured out chocolate and you will get super sweet base layer and super bitter top layer!
6. If making a slab, sprinkle your toppings over the entire slab or in sections for different flavour options!
7. Plade LEVEL in the fridge or freezer for about 10-15mins to set
NOTE: this is very rich and melty chocolate so should be eaten from chill, as it will melt in your hands as you hold it. It’s super rich so a little g
