I was inspired by my late mother, who was also a cook, o be up at the kitchen counter alongside her creating all sorts of food from a very early age. As a young adult I was in and out of catering as the fancy took me, buckling back down seriously in my mid thirties. Having worked as a chef for other establishments I decided
it was time to branch out for myself and took a pub in the outskirts of Tunbridge Wells in Frant called The Abergavenny Arms. This was serious hunting, shooting and fishing country and I took advantage of all the wonderful ingredients around me to create a successful destination food pub in a truly spectacular environment. For personal reasons I sold up in 2008 and moved back to my home village of Lindfield where I converted a coffee shop come lunch venue into my restaurant Watson's Brasserie. This establishment offered food throughout the day starting with breakfast, morning coffee, lunch, afternoon tea and evening meals. More recently I have taken on the catering franchise of the Haywards Heath Club, under my company name of Club Cuisine. This is a private members club welcoming new members to join its growing community and putting my catering skills to good use to make this happen. Following the Covid restrictions I am now able to welcome members for food Friday lunchtime and evening, Saturday lunchtime and fortnightly Sundays. My offer is a mixture of pub classics with my little homemade twists and my particular favourite, the Sunday Carvery. It is a perfect opportunity to welcome families for a roast extravaganza with a selection of roast meats, vegetables, cauliflower cheese, roast potatoes, stuffing, Yorkshire puddings, roast parsnips and chipolatas for just £10.50 per head. Homemade starters and desserts available and no washing up! What's not to love? Although a members club, don't be afraid to come and try US. We can sign you in and if you enjoy the food then by all means join. I am also available to cater for large functions in the amazing function room, stunning for any occasion, weddings, anniversaries, those special birthdays and for smaller functions in the two downstairs bars.
