Made these beautiful pancake rolls today. I have been participating in Ziangs Food Workshop. They are so easy to make and absolutely beautiful. The big amount for my sons lunch with some beautiful Maysan medium curry paste made into a sauce.
Secondly I normally make Cheese & Bacon turnovers with puff pastry but Ziang makes them as pancake rolls, so this mornings tester was with the hubby and he said they are absolutely delicious.
These are made available for the buffets we make and made fresh not bought in. Yum 😋
1. Buy fresh bean sprouts.
2. Get a big pack of stir fry mix or make your own
3. Get a big pack of TYJ Pancake Roll Pastry (everywhere sells them). You can buy small, medium or large.
4. Belly Pork or Pork Chops fat off, cut into small cubes covered in Chinese powder (we buy butcher tubs MRC) you can buy individual packs of Flavour it. Let it sit in a bag for around an hour in the fridge.
5. Take pork out of fridge, use a tablespoon of oil and heat up and shallow fry the pork don’t add anything else. Cook gently and remove from pan and leave to go cold.
6. Don’t wash the pan keep it. Add another tablespoon of oil heat up. Add your bean sprouts. Add into them some garlic purée, pinch of salt & pepper. Add a few shakes of soya sauce & same with teriyaki. Cook on high heat and remove from pan into a bowl. Make a hole in the middle and drain into a colindar so the water escapes. Add your cold Chinese pork.
7. Get your sheets, try to keep them moist by putting a clean tea towel under cold water. Wrong this out. Open your pack and place your towel over the top of the pack until ready to use.
8. Take a sheet then another, cover the remainder with the towel or they will dry out and become brittal and tear.
9. Crack an egg into a bowl and mix, add a splash of soya sauce.
10. Place a sheet on a board. Take the other sheet and make into a triangle. Place the triangle sheet over the full sheet ensuring the folded triangle sits snug into the bottom half of the full sheet. Brush all over with your egg mix.
11. Add a handful of your mixture keeping it down the bottom where your triangle is. Roll this part way up and fold in your sides. Then continue to fold completely for last two rolls.
12. Three ways to cook
a) put small amount of oil in pan & shallow
Fry on both sides on medium heat until
brown on both sides. Remove & dry
b) put a sheet of baking paper in Airfryer
Put in 3-4 rolls brush one side with egg
wash. Cook on high 200c on chips for 8
minutes. Turn over brush again and
cook for another 8 minutes
c) put in deep fat fryer at 200c. keep
turning with spatula until golden brown
Remove, put on paper roll to dry
We’ve used egg to coat these but you can use flour & water, leave out to become vegetarian.
We haven’t added MSG as I think it doesn’t really serve a purpose as the flavour is rich enough.
