Cake Friday at Woodenhill Coffee Roasters. Today we have sent in individual (but big enough to share) Apple & blackberry pies-the crust is an almond butter pastry with a little shortening for a crumblier texture enriched with egg yolk then we have packed them with a mixture of Cox & Egramont Russet apples, blackberries we foraged & froze last autumn a touch of cinnamon & a little of the amazing organic cane sugar Woodenhill stock.

Loved this Brief…Sweet 16 Celebration Cake/Red Velvet/Tiffany Inspired-red velvet sponge layered with milk & dark chocolate ganache then covered in milk chocolate Swiss meringue buttercream then a final coat of Tiffany blue white chocolate Swiss meringue buttercream. Had friends for dinner last night with not much time to prep. This is my go to the simplest & so delicious.Chicken thighs bone & skin on slash through to the bone three times (I serve two per person),peppers-cut into thick strips,fennel-chop in thick strips, red onion cut in thick strips leaving the root on,new potatoes in 1/2s, whole chorizo in smallish chunks, few sprigs of lemon thyme or whatever is at hand regular thyme or rosemary work just as well,whole head of garlic don’t worry about peeling just chop up roughly & most of the skin will fall off & no harm in the dish if not,a whole lemon cut into 8. Throw the whole lot into a deep shallow roast pan you might need two pans the important part is you don’t overcrowd the pans so everything gets a good browning sprinkle over a tiny bit of olive oil ( you really don’t need much as there will be lovely oil from the chorizo) a good pinch of smoked paprika & some black pepper & salt. Bake 200 for about an hour & turning a couple of times. That’s it. Any leftovers heat beautifully.

Frangipane or Bakewell…. Rich butter almond pastry shell flavoured with orange zest filled with a thick layer of raspberry & preserve & fresh raspberries then a layer of almond butter & lemon frangipane mixture finally a really good sprinkle of sliced almonds all baked until golden. Call it what you wil, either way it’s blimming lovely 🥰

Whatever you want really this one had a cheeseboard,a charcuterie board, our mini stuffed peppers, our pistou three cheese straws, our mini sausage rolls-the smoky ones plus caramelised onion & sage,our hummus with toasted chickpeas & crudities,salmon & prawn cocktails, our chocolate brownies, our vanilla scones with clotted cream with the amazing raspberry & jam, plus some of our cocktail cupcakes-pornstar martini & Pinacolada- Adults Only!!!
