A few very simple ingredients and look at what happens! This reminded me of when my Mum Teresa Cutajar Mckinley, used to work for Nakers Oven. On my way to school I’d pop into the shop and get a loaf, still warm from the oven and freshly done doughnuts. Heaven! French Baguette. So much better when baked at home, fresh, as there is no fat in it at all, so it can go a bit stale and loose its crust quite quickly. 15 1/2 hour process, but worth it!

I love to bake. It doesn’t come naturally to me, but I love the challenge, the smells that fill the house and the smiles a fresh baked bread brings to faces. Of all breads to bake, focaccia is by far my favourite. I’ve always baked focaccia and it’s always been ok, but I recently got Paul Hollywood’s book ‘bake’ and tried his ‘Ultimate Focaccia’ (3 times) and it takes the end result up several levels. If you’re a good baker, or new to it, I highly recommended this book to you - you can thank me later. This time I made it simply with Kalamata olives and oregano. And lots of really good extra virgin olive oil and Maldon salt!

Chicken paillard. There is a butterflied chicken breast underneath the salad, marinated for 24 hours in really good extra virgin olive oil, garlic, lemon zest and juice and basil leaves. Heritage tomatoes slow cooked at 90c for 2 hours. The salad is dressed in the same mixture as the marinade with rocket, more basil leaves, caper berries, Kalamata olives, prosciutto and Parmesan. Light and lovely. Fried up the to sear the chicken! Lovely dinner on a warm evening…

It’s been a doughy kind of weekend. Yesterday I made boa buns for the first time, today was a more familiar bake. Combined some home made confit garlic with olives to make a lovely focaccia! Haven’t baked for so long - really enjoyed it!

First ever attempt at making buns. Not perfect, but not bad, tasted great, really light and fluffy. Tomorrow I’ll do some confit pork belly with black garlic dressing and some Taiwanese fried chicken. Inspired by . I used regular flour hence there’s a slightly more more ‘golden’ colour, instead of bleached boa flour. Mine looks more like Botox gone wrong, but I’ll get there!

Yesterday’s little ‘amuse bouche’ - I made so pulled pork with a 16 hour cook - lovely and soft and then made that into pork Bon Bon’s with a BBQ emulsion. It was really tasty 🤤

For everyone who books a table for tomorrow, they’ll get a little ‘amuse bouche’. A vegetable pakora with curry-lime yogurt. Last week it was broccoli and Stilton ‘shot’ which went down very well (excuse the pun). Still a few tables available… hopefully see you here!

Something fishy about this… Prawn Cakes with a cornichon, lime and dill mayonnaise.
Then classic fish and chips, crispy gluten free batter infused with lemon triple cooked chips, crispy capers and homemade tartar sauce.

Cauli cheese anyone? Made the old fashioned way, infused milk, three different cheeses, a roux base for the sauce and topped with Parmesan, vintage cheddar, pack and freshly picked thyme leaves. Oh and cauliflower of course! 🤣 Ramblers Rest

Kalamata olive bread, toasted in a pan with a little butter and olive oil, garlic, fiery red pesto, buffalo mozzarella, micro watercress and extra virgin olive oil. Need to think of a name for it, but it tastes bloody good - especially with a glass of Pinot!

A record breaking week for The Ramblers Rest in Chislehurst for food sales.
