I’m a freelance cook based near to the northwest town of Knutsford. I cater for a wide range of occasions from intimate dinner parties to afternoon teas, larger buffets and family events. I also produce a range of interesting jams and chutneys, and I love to make cupcakes too! For 7 years I worked as a chef in France on large converted Dutch grain barges for French Country Waterways. The barges op

erate as luxury hotels cruising on the waterways all over the French countryside. I produced everything from hearty cooked breakfasts, to fresh and healthy salad lunch buffets and elegant four course evening meals. I had full responsibility for planning my own menus and sourcing fresh, local ingredients. This was a fantastic opportunity to challenge myself with both modern innovative dishes and traditional classics using some of the best quality ingredients available. One of the important lessons I learnt whilst cooking in France was that fresh, top quality seasonal produce is an essential element in creating good food and delicious meals. The french really have a passion and pride for their food and produce, their local food markets are always brimming with an amazing array of beautiful fruit and vegetables from the region. Returning to live and work in England, it’s wonderful to see that this passion and pride is here also, along with a fantastic ability to embrace new flavours and to try unusual cuisines.

Summer holiday lunches.

Pizza from a quick flatbread.

1 cup self raising flour to 1 cup yoghurt.
May need a little more flour to stop it being too sticky. Roll out, and fry in pan on both sides. My batch made 4.
I topped this with red pesto, pizza sauce, mozzarella and a little cheddar.

It passes the hungry boy test.

My mash is heavy in butter, I added more after this pic 🤪, lots of black pepper and well seasoned with salt.

Moroccan Dips -

Labneh, drained Greek yoghurt topped with spiced roasted cherry tomatoes and black sesame seeds.
Houmous topped with spiced coriander lamb mince and pomegranate.
Feta and spinach dip topped with crunchy chickpeas, feta and mint.
Beetroot and mint dip, pomegranate and mint.
Babaganoush with caramelised roasted aubergine and sesame.

There were flatbreads to go with and a herbed salad with almonds and red pepper dressing.

Followed by a trio of tagines, lamb with apricots, chicken with prunes and pumpkin, pepper and spinach. Minted and fruited cous cous and herbed white and wild rice.

This is one of my most popular menus at the moment, it makes easy eating with bright colours and beautiful spices and herbs. And you can graze away…

Simple bacon, onion, peas, homemade chicken stock, parmesan, squeeze or two of lemon juice, butter. Oh and the scrapings of a container of homemade tomato, basil and veggie pasta sauce. Waste not, want not.

Back to the beautiful The Love Shack in glorious sunshine.

Fresh tomato and mozzarella salad, sprigs of basil, dressing of balsamic and basil oil, a grind of black pepper.

Flatbreads with tzatziki and houmous to go with the classic Greek moussaka.
Kids had a fresh tomato and veggies pasta sauce on spaghetti.

Then a summery fruit platter for after.

BBQ time. Chicken breasts simply marinaded in lemon juice, olive oil, thyme and marjoram - it’s gone crazy in my herb garden so everything’s getting it!
Some already cooked new potatoes, again with marjoram and lemon, throw on the grill too.

A quick salad of catering leftovers! 😆 romaine lettuce with spiced crunchy chickpeas, mango and lime salsa and crumbed bacon pieces topped with mint.

All in the sunshine of the weekend. ☀️🪴

A little pot of already chopped shallots, a teeny bit of Moroccan red pepper dip, a lonely courgette - no one in our family likes courgette just as courgette, some swede and carrot mash from the freezer from Burns night, half a carton of passata, cherry tomatoes needing a home, the scrapings from the bottom of a tub of mascarpone from when I made tiramisu, add a bit of garlic, some homemade chicken stock, some basil from my pot growing on the kitchen sill and…
A really yum bowl of sunshine soup. And more for the freezer.

There was more to this meal, but no photos!
You’ll have to believe me that the lasagne, aubergine melanzane, pepper, feta and almond salad, saffron cauliflower salad with pine nuts, raisins and crisped onions, dolcelatte, red onion and walnut tart followed by tiramisu and frangipane and blackberry tart were both beautiful to look at and tasted lovely…

And I’ll try so hard to remember to take photos next time!! 🤪

Back at The Love Shack today serving grazing Italian food - bruschetta platter, caprese garlic bread, asparagus arancini followed by spaghetti carbonara, spaghetti and meatballs along with sundried tomato pizza. Then Tiramisu!
