The "asado" is the most popular way of entertaining in Argentina and has been familiar to me all my life, thanks to my parents, both born and brought up in South America. While friends and family gathered, a whole lamb would be slowly roasted over an open fire in the garden. The excitement would build as chorizo sausages in chunks of bread (choripan) were passed around and warm, spicy empanadas we
re nibbled straight from the grill. Then came the moment: the lamb would be lifted away from the fire and tender meat sliced onto serving platters. Salads would appear and, while the sun went down, in the warmth of the glowing fire, we would linger over one of the most delicious meals imaginable. Experience the "asado" yourself for your next party, anniversary or celebration. Buen provecho!
