This beautiful creation by Gary Folkes is one of our favourites not to mention one of Garys; this dramatic delicacy is a Canapé stunner, a sure head turner at any event.
Squid produce ink in a mysterious piece of anatomy called the ink sac. The flavour of squid ink is close to the taste of fresh sea fish with some umami hints.
Among all of the varieties of fish Squid gluttonously enjoy, they have a preference for shrimp — a nod to this canapé creation.

Ginger cured Chalk farm Trout with split coconut emulsion.
This beautiful dish by @jitin is a perfect example of his unique experience and flair for blending styles and ingredients to create dishes that are truly outstanding.
Chalk farm trout is a British fish, the secret to these beautiful trout is the famous chalk streams. The fast flowing water provides the perfect environment to rear Trout, as not only does this give them an exceptionally clean taste, but the high flows mean they are very lean.
Chalk streams and rivers are a unique and prized habitat, with exceptionally
high levels of biodiversity thanks to their especially clean waters.
