Prawn & squid cracker,
smoked cod’s roe and espelette pepper.

This beautiful creation by Gary Folkes is one of our favourites not to mention one of Garys; this dramatic delicacy is a Canapé stunner, a sure head turner at any event.

Squid produce ink in a mysterious piece of anatomy called the ink sac. The flavour of squid ink is close to the taste of fresh sea fish with some umami hints.

Among all of the varieties of fish Squid gluttonously enjoy, they have a preference for shrimp — a nod to this canapé creation.

Jonny's youth belies his vast experience. Having risen through the ranks at Heston Blumenthal’s Fat Duck at Bray, as Ashley Palmer-Watts’s right-hand man, Jonny is the former head chef at the two-MICHELIN-starred Dinner by Heston Blumenthal – one of the most exacting kitchens in the world.

Acting as a bridge between front-of-house experts Callum and Jorge and our MICHELIN-starred chefs, Jonny is an operational maestro who will ensure that their culinary vision is achieved and surpassed at every event, with a rigorously trained brigade. He will also collaborate with the chefs on their menus, to ensure they can be exquisitely executed in event conditions, and work to translate the precision and ambience of a fine restaurant into a breathtaking event.

Chalk farm trout is a British fish, the secret to these beautiful trout is the famous chalk streams. The fast flowing water provides the perfect environment to rear Trout, as not only does this give them an exceptionally clean taste, but the high flows mean they are very lean.

Former Executive Head Sommelier at Jason ‌A‌therton’s multi‑MICHELIN‑starred the Social Company‌,‌ ‌A‌fter training in her native Loire ‌V‌alley‌,‌ Patry moved to the UK where she was Head Sommelier at Gordon Ramsay’ Maze by the time she was 25‌.‌

Crozes-Hermitage ”Les Croix” Vieilles Vignes, Rhone Valley, France 2018

The Domaine Les Bruyeres was created in the 18th century by the Marron family and is now run by their direct descendant, Les Croix is made from a plot of vines over 60 years old. The grapes are entirely destemmed and vatted then devatted by gravity. The vinification is traditional and takes place in concrete vats. Ageing lasts 18 months, including 12 months in old barrels.

Filled with aromatic notes of Thyme, rosemary and
Mint. Concentrated wine with dark chocolate and smoky notes,
followed by silky tannins and a long and lovely intensity.

Co‑founders Callum and Jorge have worked together for many years masterminding the catering at every level‌,‌ from huge international events to luxury private gatherings‌.‌ But it was in the shared love of f‌ine dining‌,‌ world travel and extraordinary moments that they rooted Signature‌.‌

Callum has over a decade of experience in the hospitality industry, working with venues such as Lords, Twickenham, Wembley, The Oval, The Shard, Henley Regatta and Buckingham Palace, just to name a few.
