PESTO
The recipe for pesto, as we know it, does not have very ancient origins, dating back to the mid-nineteenth century.
But this condiment can only see the light if you think that Liguria is traditionally the cradle of aromatic herbs.
The use of aromatic herbs for the Ligurians is a tradition that has origins in the Middle Ages, with different habits, based on social categories: the rich season their banquets with refined spices, while the poor used it to flavor soups that are not too tasty.
This ancient tradition seems to have given rise to pesto, a cold condiment obtained from basil, in dialect Baxaicò and Baxeicò (from the Latin basilicum). This plant, of Arab origin, boasts a curious botanical name: Ocimum basilicum, literally royal herb.

But let's go back to the pesto: the original recipe dates back to the second half of the 19th century; the first to mention it seems to be a well-known gastronome of the time, Giovanni Battista Ratto in his work, La Cuciniera genovese The secret of a good Genoese pesto is to make it in a marble mortar by pounding the seven ingredients until a cream is obtained.
Defined as the king of Genoese condiments, it is also good spread on a slice of bread, try it with trofie, potato gnocchi, mandilli, trenette or lasagne. The choice is yours, dive into this triumph of taste, it will seem like you are touching the sky with a finger.

Ingredients:

Four bunches of Genoese basil DOP (60-70 g in leaves);
45-60 g of aged Parmigiano Reggiano or Grana Padano;
20-40 g of Sardinian pecorino;
60-80 cc of DOP Extra Virgin Olive Oil from the Ligurian Riviera;
10 g of coarse sea salt;
30 g of pine nuts (from Pisa or, at least, from the Mediterranean area);
One or two cloves of garlic (preferably from Vessalico, for its delicate taste).
Method:
After washing the basil leaves, which must come from plants that are no more than two months old, dry them carefully on a tea towel.
Put the garlic in a large marble mortar together with a few grains of salt and start pounding with the pestle, which must be rigorously made of olive wood.
Add the pine nuts and pound again, obtaining a rather coarse pulp.
Add the basil leaves while continuing to pound gently, then add the two cheeses and mix everything together.
Soften the dough by slowly pouring the oil slowly until you obtain a homogeneous, creamy and good consistency mixture, then transfer it to a bowl, mixing it with the remaining oil using a wooden spoon.
