SUMMER SLICED TOMATO

I’m still alive, I promise.
Life has gotten in the way. Being a chef has consumed my life. But I love it and we move and I’ll just start dishing out way more.

ALSO the video content will commence soon, I’ve got a tripod and im ready to break my video content virginity.

But here we are:

Directly from outside in France, my little cousin runs a market stall and sourced me the best god damn tomato’s going. I foraged all the fruit in my uncles garden that morning.

PINTXO

In keeping with my Spanish tour….I made my own lil Pintxo (Pincho) as I was famished

Garlic oil infused baguette pieces top with:

1. Roast red pepper, manchaigo, anchovies
2. Red pepper sauce with pickled sardines and onions
3. Whipped mascarpone with paprika oil, lime and salt topped with fried chorizo and garlic and the oil mixed in
4. Curried butter beans, onions and green slice slices

Fu***ng smashed all these in seconds. Had a little Guinea pig to help me.

HAM, GOATS CHEESE BAGUETTE.

Had a lil balcony in so I made a Santanwich to enjoy whilst watching the world go by. Various cuts of jamon, soft mountain goats cheese, very vinegary dressed lettuce and lots of parsley with garlic aioli and Dijon. Served with cornichons and pickled onions because I’m French like that.

Crunch crunch.

SHŌCHAN IZAKAYA

Peasantry at its finest - ridiculously tasty. Ridiculously good quality all for £6.

Shirataki Noodles with tofu in a beef broth & onion.
Braised pork and potato in dashi.
Beef gristle with broth and tofu.

Probably the best meal I had in Tokyo thus far.

CONVEYOR BELT SUSHI

Ask yourself next time you’re buying sushi in the UK. Why the hell am I paying a mortgage for this meal?

The below speaks for its self, effortlessly delicious.

Tuna ramen bowl
Broiled Soy Otoro
Baby chicken
Cartilage bites
Grilled eel
Albacore, blue fin, yellow tail and minced albacore tuna
Grilled sardines with ginger.

GRILLED CHEESE

I’m sick as a dog. I wanted tomato soup and only one thing goes with tomato soup and that’s a grilled cheese sarnie with cheddar & Red Leicester. Sorted

CHICKPEA ‘TUNA’ TOASTS

When one doesn’t actually have tuna in a can or otherwise, you can use all ingredients you’d use usually combine for a tuna mayo salad and just use crushed chickpeas instead. Arguably tastes the same, just make sure you add the Dijon cos otherwise you’re a fu***ng heathen.

Don’t hate me if I use ketchup to dip in, it slaps - try it.

PORK CUTLET KATSU

It’s a rainy miserable day in London and so I got busy cooking up this cheap sandwich combo involving pork cutlets, home made katsu gravy, herby mayo and dressed baby gem in a crunchy ciabatta. Punched hot with chillis and sriracha. Easiest s**t to put together, this is mostly pantry goods.
