Hey I have a teenager 😍. Both my son and I were recovering from a winter virus but really wanted to celebrate his birthday . The brief was simple “dontbworry mummy a few @krispykremeuk donuts will do.” So here is a very simple spread with a donut cake. We sang happy birthday , we connected, we made a few mocktails. “thank you mummy and daddy it was perfect”. I always make a@point to celebrate our birthdays it doesn’t have to be fancy or flashy but acknowledge another year has passed is important. We stop for a moment of gratitude to notice how far we have come, what we want to work on for the year ahead. It is our ritual, it is important.

4 secrets to perfect meatballs.
I have to admit I made terrible meatballs up to this point until I spoke to my friend, from Napoli. I asked her for the recipe. “The recipe?” She told me amused “ faccio tutto ad occhio” of course she cooks with her eyes…what a silly question. 😍 But my meatballs always turn out more like tennis balls hard and dry! So after her explanation I came up with what I think are the 3 secrets for perfect meatballs:
#1 Soak abundant amount of bread in milk or water
#2Add a pinch of sugar, don’t ask why. The answer is “ dunno my mum and my grandma did this and so do I” . ok I can live with that
#3 the meatball mix in the fridge for an hour or so for the flavours to meld into each other.
#4 fry them before placing them in tomato sauce.
They turned out wonderfully moist.
So here is what I did:
3 slices of white bread soaked in milk
1/2 kg of mince meat
Chopped parsley 1 clove of garlic chopped in 3 to be removed before cooking.
- handful of Grated Parmigiano but pecorino would have been great too.
2 eggs
Salt and pepper
Now an important passage. When I asked but how many eggs and bread her reply I loved : “tutto a sentimento” 😍 which means as you like. So you got use your senses get stuck in, taste until you are satisfied. Loved the process and loved the result. And for you what’s your secret for perfect meatballs?
P.s. here I added a little tomato sauce but you can add more if you like. That is indeed “ a sentimento”

The secret for a good pasta dish? Is to add pasta to the sauce and toss for the last couple of mins of the cooking process. This is called “risottare” pretty much like a risotto infact , you let the pasta cook in the “juice” (sauce) for a min or so and it will take on all the flavour and the sauce will thicken, naturally.
