Shermin founded Najma's Catering & Events in 2011 and began trading at markets stalls and festive events in South West London in 2012. Najma’s gained recognition within it’s first year of business winning the ‘Highly Commended’ award in the category of Best Takeaway and Delivery at the 2013 Time & Leisure Food & Drink Awards for Surrey and South West London. The following year Najma’s received com

mendation again in the same category. Shermin turned her award-winning business into a cookery school during 2013. Classes are taught in her and level-5 food hygiene rated home kitchen. Most recently Najma’s was awarded Most Innovative Indian Cooking Class Provider - London by Lux Life Magazine.

Learn the art of traditional Indian cooking in this 4 hours long class. You will discover the spices and techniques used to create some of the most popular North Indian dishes served during a typical family meal.

My Vegetrian Thali class will now run on selected dates at the much coveted Tooting venue. Spaces are limited to FIVE ONLY so book early to secure you place!

The menu can vary for each Thali as we often work with seasonal vegetables. In this upcoming class we will prepare the following:

My take on a healthy no-oil Tostada 😋

4 wholewheat tortilla wraps
1 cup basmati rice
Pinch of saffron
1/2 tsp salt
Choice of protein (mince, pulled chicken or plant based protein)
1 broccoli head + 1/2 tsp crushed chilli, 1/2 tsp cumin, 1 tbsp oil

How to make your Tostada:

1. Prepare your protein of choice and set aside.
2. Steam the broccoli. Mix in the oil, chilli flakes, cumin and salt and stir-fry for 7 mins at 180 degrees C. Set to one side.
2. Rinse the rice and place in 1.5 cups of boiling water with 1/2 tsp salt, a pinch of good quality saffron and 2 tblsp oil. Bring to boil, cover tightly and cook on low for 20 minutes.
3. Meanwhile, place a tortilla in a deep microwaveable dish and press down into a bowl-like shape. Cook on high (based on 900W) for 3.5 mins. Allow to stand for 30 secs before removing. Repeat for all the tortillas. Feel free to use an air fryer for the step if you prefer.
3. To build your Tostada, fill the tortilla with 1/3rd of protein, rice and broccoli. Top with seasoning or sauces of your choice and enjoy!

NO OIL Chicken Kofta!

Juicy, flavourful and easy way to make with my Kofta Spices.

RECIPE

Prep time: 15 mins
Cook time: 30 mins (cooked in two batches)
Makes: 15 large koftas

Ingredients:
1kg chicken mince
NAJMA’s Kofta Spices (40g)
1 finely chopped onion
1 tbsp garlic paste
1 tbsp ginger paste
1/2 cup gram flour
2 tsp salt
1tsp crushed red chilli
Chopped coriander

Method:
1. Mix all the ingredients well. Smear your palms with a little oil to prevent stickiness and form 15 large meatballs,
2. Heat a heavy based non-stick pan gently and add about half the meatballs. Fry them over a medium heat for about 15 mins, turning over half way. Turn them over onto the sides to cook all over evenly. The repeat with the second batch.

Serve with a salad and a mediterranean pilaf or on a bed lemon couscous. You can store these in your fridge for 2-3 days and enjoy as a healthy protein snack!

I had the pleasure of bringing together this beautiful family to celebrate a birthday with a 2- hour off-site Cooking Experience 🧑‍🍳
The family made four different dishes:
Rogan Josh
Goan Prawn Curry
Dal Tadka
Pilau Rice
We experimented the difference in textures and flavours by changing up some key ingredients to suit individual palettes and it all went down a perfect storm 👌🏼

APPRECIATION POST🫶🏼🙏🏼

I have only just managed to unpack and sit down to write this message of appreciation. I will keep this as short and relevant as possible.

I write this post on behalf of all small business owners who traded at this year’s events . Whilst the experience to be on the other side and engage with the public and fellow traders was nothing short of amazing🤩 from a sales perspective though much of our business has been overshadowed and swallowed up by the bigger brands. The extreme high costs to not only secure our stand but every single additional item needed to run a functional stand has left us barely breaking even. We live to tell the story in the hope that the exposure will help push our brands forward.

A huge shoutout out and The Travelling Craft Room for their support; friends and colleagues and EVERY SINGLE CUSTOMER who attended my cooking demos and purchased my spice products and yoga wear

A SPECIAL THANK YOU to all the beautiful souls who joined my Power Yoga Flow on Sunday. Your warmth, kindness and appreciation will live in my heart forever ❤️ Unfortunately, I believe there were no photographers to capture our shared practice and my manpower was guarding my stand at the time.
