Cantine Cantine offers seasonal and bespoke catering services – from intimate dinners at home to public events on location and everything in between.

Cantine was founded by Maud Faussurier. Born to a French-Italian father and German mother, Maud’s family life unfolded around the kitchen table in her parents apartment in the 1st arrondisement in Paris. After an intensive traineeship at the Institute Paul Bocuse in Lyon, Maud honed her skills working under Mark Hix at Hix Oyster and Chop House, Pierre Gagnaire and
Roel Lintermans at Sketch and mo

st recently as Head Chef under Yotam Ottolenghi& Sami Tamimi at Ottolenghi. All food is freshly made and free from preservatives and colouring. Werever possible we use sustainably caught fish, free range and organic poultry and meat. We source our ingredients locally within Britain and Europe, actively
reduce food waste and recycle everything.

We’re having fun making new drinks - non alcoholic that is - for a mid week dinner. Fig leaf and chamomile syrup, grapefruit juice, lemon juice, angostura bitters, fig purée and soda water is simply delightful. Drink as much as you you like, jump behind the wheel or pocket call your boss - you can handle this.

Hope you’re well. Today we’ve been mostly baking Victoria sponge cakes. Victoria sponge, like most tasty British food (sorry!) has its origins elsewhere. * Sponge cakes, leavened with beaten eggs, originated during the Renaissance, possibly in Spain.The sponge cake is thought to be one of the first non-yeasted cakes, and the earliest recipe in English is found in a book by the Poet Gervase Markham titled ‘The English Huswife, Containing the Inward and Outward Virtues Which Ought to Be in a Complete Woman (1615)’. Copies of which are available on e-bay for those keen to impress on Valentines or Mothers day.

Today we’re having fun making a Bûche de Noël.

Ours is made from pumpkin sponge, blackcurrant compote, chocolate pastry cream and has goat’s cheese chantilly to balance the sweetness. She’s great dinner company and can handle guests with large appetites as well those who only like to look.
