We asked Carole the secret to proper gravy. Here’s what she said:

1️⃣Start with stock – like vegetable water from when you’ve used the steamer, or a broth from boiling chicken bones.

2️⃣Cook your joint with veg and a slosh of wine. It soaks up the juices as the meat browns, so often all you’ll need to do is thicken it at the end.

3️⃣Add a dash of soy sauce, worcestershire sauce or even marmite to add richness to your gravy.
