What an absolutely incredible opening weekend we had at Sacrewell farm.

Opening a new site is always an intense and exciting time, chock full of new challenges and experiences, getting to know the client and the customers, recruiting new team members, sourcing new suppliers, and with everyone putting in 100 percent, working together to create something special.

Well, what a truly special place this is. A gorgeous farm set deep in the countryside, but not too far from Peterborough. A family friendly venue with a range of things to do and see. With a fabulous play barn, a selection of historical buildings, open fields and meadows, and even a whole range of activities to get involved in. And not forgetting the real stars of the show, the adorable animals that call this tranquil piece of paradise home. Because even nature needs its celebrities.

It was all hands on deck yesterday as we worked alongside our newest business partners to create a gorgeous new venue nestled deep in the heart of the English countryside.

The farm cafe-restaurant has undergone a stunning renovation, blending rustic elegance with modern comforts. This wonderful family-friendly dining space has been transformed into an inviting yet elegant space, with a calming colour scheme and plenty of character. The large windows frame breathtaking views of the surrounding fields and meadows and there are plenty of outside tables to enjoy the glorious sunshine on a nice day.

We have installed a state of the art coffee machine which will be serving the finest organic speciality coffee, and the menu will be a selection of carefully chosen dishes, showcasing delicious farm-to-table cuisine.

We had a blast meeting all the adorable animals that live in this gorgeously tranquil farm, open to the public 7 days a week. It's a place where the past and present seamlessly come together, inviting visitors to relax and savor the beauty of the countryside, and enjoy some fabulous food and coffee whilst doing so.

Today is the first official day of spring, also known as the spring equinox.

Usually occurring around 20th or 21st of March, the equinox marks the moment when day and night are nearly equal in length. This celestial event signals the start of spring in the Northern Hemisphere and autumn in the Southern Hemisphere. It happens when the Earth's axis is not tilted toward or away from the Sun, causing the Sun to shine directly on the equator. Our executive chef Stuart Purdy was cooking up a storm yesterday at the incredible Meals Collective event.

With wonderful suppliers like The Jolly Hog, Isle of Wight, Ice Kitchen, and so many more, he created an array of delicious dishes, showcasing the exceptional quality of produce available.

With sustainability taking centre stage, this was a full on powerhouse of a day that allowed the movers and shakers of the catering industry to come together to dive deep into the critical issues facing our sector. From innovative solutions in sustainable manufacturing and eco-friendly packaging to the ways in which businesses can come together to create more efficient, sustainable models.

The energy and commitment from everyone involved made it clear that positive change is not just possible, but already happening, thanks to the collective efforts of so many like-minded companies and individuals in the industry.

The immensely talented Naveen Sahni has created a fabulous new book celebrating authentic Punjabi and Indian cuisine. Featuring 50 sensational recipes, with a contemporary twist, his book is a testament to the vibrant flavors, traditions, and culinary artistry of Indian cooking.

Reducing Plastic Waste in Food Packaging: A Necessary Shift.

Plastic pollution is a very serious threat to the biodiversity of our planet. Particularly our marine life, where 300 million tonnes of plastic contaminate our oceans, damaging coastal ecosystems, entangling wildlife, and even making it's way into the food chain.

A staggering 29.8 billion pieces of avoidable plastic packaging are used annually in the UK. Research shows that 84% of unnecessary plastic can be replaced or significantly reduced with fibre-based alternatives yet the UK remains one of the most reliant countries on plastic packaging in Europe.

We can all do our part to make a difference. Using refillable containers for our water instead of single use plastic bottles is not only more ecological but works out far cheaper in the long run.

At Bespoke Food, we are committed to making a difference. Our grab-and-go range is completely free from plastic containers, instead we use recyclable cardboard, tins, and glass, aligning with our B Corp promise to reduce our carbon footprint.
We are also encouraging our suppliers to get on board, especially in categories where plastic is being overused.

Sustainability in food packaging is no longer optional, it's essential. Let's drive these changes together for the future of our planet.

Our executive chef team were busy this week visiting some extra special potential partners.

Meeting up with the fabulous team at London's iconic Galeta Bakery and tasting their delicious cakes and pastries was a tough job but somebody had to do it.

Starting out as a market stall on the famously prestigious King's Road they proved so popular that their entire stock sold out in two hours flat. They now have a significantly larger operation but maintain the same care and attention to detail as ever. Award winning, homemade baked goods, made with 100 percent natural ingredients. This East London gem showcases the very best of British baking.

As one of the few independent contract caterers in the market, it's important to us to work with companies that share our ethos.

The East London mushroom collective is championing hyper-local food production in a closed loop system. By sourcing waste materials from East London businesses, and using them to grow mushrooms in the iconic New Spitalfields Market. They are helping to redefine how people think about waste streams and the importance of sustainablity. Zero waste and minimum food miles makes an enormous difference in tackling climate change and we are very proud to have been chosen by them to participate in their incredible free mushroom and farm direct surplus scheme.

With some absolutely stunning oyster mushrooms, our chefs created this exquisite oyster mushroom cluster. Braised in a soya brine, filled with miso, pea, and spinach puree, and mushroom and shoyu puree. Brushed with a delicate soy glaze and garnished with paprika carrots, pickled oyster mushrooms, sautĂŠed mushrooms and shallots. Because fabulous produce deserves to shine.

Tomorrow is the start of the Chinese new year. A 15 day festival marking the beginning of the lunar calendar.

It is the biggest celebration for Chinese people and is a time when family and friends come together to bid farewell to the old and welcome new beginnings and fresh starts, with hope for health, happiness and prosperity.

Our onsite preparations are well underway and our chefs have been busy creating some truly mouthwatering dishes for our customers to enjoy.
