Meringue roulade (not the same as meringues! Please see previous post to make meringues!) Ingredients, I’m not kidding that’s all!
5 large eggs (you will only use the whites, keep the yolks for a crème pâtissière/custard)
275f of caster sugar
250ml double cream
300g mixed fresh red fruits
How to?
Separate eggs whites from the yolks; this is a crucial step! If you have the tiniest amount of egg yolk in the white, your meringues will be very flat! So if you cannot separate your egg whites from the yolks please buy an egg separator! There is no shame!
Pre-heat oven 180C
Line a rectangular tin with greased non-stick baking paper. Oil it a tiny bit.
Separate eggs whites from the yolks
With an electric whisk, beat the egg whites until firm, very firm!
Add the sugar and whisk 30-40 seconds more until blended. ⚠️ -If the preparation is loose it is likely that you left some yolks even the tiniest amount! Don’t be tempted to add flour or corn flour to get it back, it will not taste nice!-⚠️ Place the tin in the pre-heated oven and bake for about 15/20 minutes until golden and crisp and firm to the touch but still softer inside!
Remove the meringue from the oven. Leave to cool down.
Using a lid or flat tray (no borders) put à baking paper on top of the tray and hold the side of the tray with the meringue in it.
Turn upside down on to a sheet of baking paper .
Delicately remove the paper from the base of the cooked meringue and allow cooling for about 30 minutes.
Lightly whip the cream. Spread evenly over the meringue. Cut some red fruits and sprinkle over the cream mixture. Roll up the meringue firmly using the paper to help you, from the long end to form a roulade, it is essential to keep the roll tight.
Decorate with fruits or chocolate or anything else you like!
