Welcome

I am Fabienne and I've loved food, cooking and inventing recipes since I was a young girl. I grew up in Paris, the youngest of seven children, with a Tunisian born mother and an Italian father. Given my North African, Middle Eastern and Italian heritage, it's no surprise my food is packed with Mediterranean flavors. Now with several professional years experience in catering and teaching c

ooking to adults and children, I am lucky enough to work with food every day, catering for corporate and family functions, running workshops and cooking parties and privately teaching adults, teenagers and children to cook. I have been writing recipes for the Jewish Chronicle since 2011 and have more than 100 new recipes in my repertoire. Writing encourage me to study my family recipes, make them evolve and create new recipes with seasonal ingredients, modern technics and always with fun. I have published a book Steamer The Cooking Wizard, a story cook book about healthy eating for children, their parents and carers, with six short stories and twelve delicious and healthy recipes. Whether you need a lamb tagine for 25, an oriental rice or an Adafina for 12, a French apple tart for 8, a cooking lesson for adults, for you or your soon-to-leave home teenager, or a cooking lesson for children, in English or even in French for your petits chefs, I’m ready to spring in to action. I am also well known to give more specific and personalised cooking lessons, either for a gluten free or dairy diet, a diet you have to follow during an illness (diabetes, ketogenic diet), vegetarian or fish based only diet, you can ask me any of your specific requirements, we will recreate together, respecting your tastes and allergies or dislikes, a range of menus and meals that you can share with your family and friends. The moving and heartbreaking story of an Iranian woman forced to flee her country alone, leaving everything and everyone she loves behind, because of an abusive husband. A play that resonates so much, a story of resilience, courage and hope, but also a story of food for the soul of how it takes you back where you’d want to be and how it brings people together.
I thought so much about life, my family, my mother that I miss always and more as we approach the High holidays of Jewish New Year.

Part of Refugee Festival Scotland.

« Come join the talented and experimental chef/teacher, Fabienne Viner Luzzato as she ‘Cooks with the Community.’ French with Tunisian and Italian origins and the youngest of seven children, Fabienne will teach us how to make an array of dishes close to her heart, with recipes deep in heritage with stories to tell.

You’ll be able to watch Fabienne in action, even help out in the kitchen, try some yummy food and take some fantastic recipes home with you!

The workshop will explore Tunisian and Middle Eastern inspired plates to share and will be fully vegetarian.

Salmon shawarma with za’atar pita and Israeli salad

Ingredients
For the salmon shawarma:

6 - 8 salmon fillets

2 tbsp sunflower oil

1 lemon, juice only

Shawarma spice mix: ½ tsp of each of the following: paprika, garlic, turmeric, allspice, coriander



For the salad:

1 cucumber deseeded and cubed (I deseed as it reduces the water released)

3 large tomatoes, deseeded and cubed

2 carrots peeled and cubed

200g white cabbage, roughly chopped

3 spring onions, finely sliced

1 lemon, juice only

6 tbsp olive oil

Salt and pepper



For the za’atar pitas:

6-8 pitas, halved and toasted

1 tbsp za’atar

2 tbsp olive oil



To serve:

Hummus and tahini

Amba (Israeli mango chutney)

ParsleyWash the salmon fillets and pat them dry. Lay them on baking parchment on a baking sheet.
Mix the spices, the lemon juice, salt, pepper and oil.
Mix and then rub on the salmon fillets.
Cook in the oven at 180°C (fan) for 10- 12 minutes maximum.
To make the salad: put all ingredients together in a large bowl and add the dressing. If you’re not going to use all the salad immediately dress only what you’re using.
For the pita: warm the olive oil in a frying pan and add half of the halved pittas; fry on both sides for 2 minutes and sprinkle with za’atar.
Either serve each component in large bowls so people can make their own OR prepare a plate per guest layering pita, hummus, then salmon and topping with salad. Finish with parsley and a drizzle of amba and tahini.
