I have been enjoying unearthing my foodie wares and yesterday my eggs would of been salting for over a month. I absolutely love salted duck yolk prawns ๐คค when I go out to eat so I decided to try make them myself ๐ฆ
I have frozen my yolks and will be used once I get some juicy prawns to accompany. I thoroughly enjoy preservation techniques and recently got into fermenting too, to really get the most of food but to also change it for that extra umami punch. Love all the food science that happens in my kitchen, making all the tasty things! So here's a video with my best food sexy food voice lols talking about it all.. ๐

Vegan green goddess salad ๐๐ฅ๐
Part of tonights dinner is influenced by tiktok (lols) and the salad that I see everyone doing on there by @bakedbymelissa ๐ This is her green goddess salad that she eats on her video with tortilla chips. This will be accompanying my Vegan mixed bean chilli ๐ ๐ฟ
Think creamy vibes with this salad, good crunch and actually really so delicious for how simple it is. It's mad to see the amount of stuff on tiktok I actually want to cook and make at home, never thought I'd get into it ๐ I think I'll just stick to watching rather than making videos though ha!
I haven't got blue tortilla chips for this tonight but I made my own using leftover tortilla wraps just crisped up in the airfryer, simples! But here's me tryna be a bit tiktok when I first sampled it this afternoon haha ๐ ๐ฟ โจ

Crispy Pata
Crispy Pata - a Filipino dish consisting of deep fried pig trotters or knuckles served with a soy-vinegar dip. It can be served as party fare or an everyday dish you can sometimes get in restaurants ๐ต๐ญ โจ
I used the air fryer for this and got really good results without using any oil so not only is it healthier, but also just less mess! The fat and skin was so crispy with the flesh underneath so soft ๐
I used a stock to first boil the Pata in and added in Sh*take mushrooms for extra umami in the pork and to make a delicious stock to use after. I dried the pork out before air frying and we enjoyed the Pata in the form of Pata tacos ๐ฅ ๐ฎ
I pulled and shredded the Pata meat and before serving on our tacos, reducing it back into the stock which just brought out the sweetness in the pork. I then chopped up the crackling and crispy bits of the pork so we had two textures for the tacos which worked so well ๐ ๐ ๐ฅ
I'm off for a family meal get together this weekend and it is a bit of a jacobs table. For anyone who doesn't know what a jacobs table is- it's where you all bring a dish and we eat together. It's been a bit of a Fulwell tradition over the past few years and my contribution this weekend is some Pancit noodles. I used the delicious leftover Pata stock ensuring there's no waste ๐ and just bringing extra flavour bombs to the noodles! ๐

From Bananas to bottle. From Banana Ketchup to soap ๐ A little video I did just showing the no waste product I made using the bi-products of what's leftover from Banana K Production ๐ต๐ญ
Banana peels are said to have natural healing properties. I've not got to the stage of eating or cooking with them yet lol soz @nigellalawson ๐ but not allowing them to go to waste for these bars of soaps is something I am proud of โจ ๐
Been busy making them all this week in iso ready for events in the next few months โจ ๐ต๐ญ

Lamb Kofte Tagine ๐ฒ๐ฆ
Semi fridge raid dinner and also made using some delicious things passed onto me from @tastethelovemcr โจ What else do you make using some lamb mince your friend gives you? You make Lamb Kofte Tagine ๐ฒ๐ฆ probably my second favourite Tagine after the OG Chicken and preserved lemon and olive one! ๐
Had some Tabbouleh leftover from cooking Mechoui Lamb the other day (sorry no photos ๐ ) and Baba Ganoush accompanied the Kofte. I also made some Hummus and a fresh zingy salad using lime and sumac pickled onions, lots of fresh dill and added toasted sunflower seeds for texture ๐ FIT x

Next to Asian cuisine I probably really enjoy cooking and making dishes that remind me of my upbringing and time I was in Saudi ๐ โจ
Made this lovely plate of my favourites for lunch one day. Tabbouleh is funnily enough the first thing I got taught to make in DT (anyone in BISR remember this?) ๐ with some chicken shawarma meat that I had marinated in lots of spices over night before grilling and slicing to go on top of homemade hummus and halloumi ๐ฅ
So lucky to live in Lev to get fresh and different varieties of Middle Eastern bread which mopped this all up nicely! ๐คค Season with a good glug of olive oil and sumac all over.. Deliciousness on a plate ๐๐ฏ I don't Mezze about ๐
