Time for a spritz :). I love cooking pork butts and briskets the stall is still an unknown. For some of the people that don't know its when the pork hits its sweating point like u exercising it starts to shed water and fat to cool down, sometimes it takes an hr or sometimes it can take 4 hrs to get the temp rising again, I find its best to just ride it out alot of cooks wrap Or push the temp up but when you have diffrent meats on its not always the best option, I do find its a good time to spritz and tray the pork though so u catch the best juices which then get mixed back in once its rested.
