Another trip to London

Most people who know me know I just love a day out in London - whether it’s window shopping along the Kings Rd, Soho, Chinatown or just a mooch round the shops with cafe stops …. It’s good to get out of the Shire and explore the city once in a while….. yesterday I had 2 pitstops … not 1 but 2 epic foodie treats …. here’s where …..Bonus - if you want to order a new MG just rollout of the restaurant and into the showroom. 🤣🤣🤣🤣🤣🤣

1st up on Marylebone Rd - totally brilliant - who’d know it’s inside the MG car showroom - I kid you not - it’s fab, the staff are brilliant and the food is awesome - such a good choice of both sushi and ramen and daily specials - will definitely head back here again soon.
2nd stop - …. Where to start? Having visited this bastion of all things Italian in Milan and Genoa I was so excited to get to the London site next to Liverpool St Station and it’s doesn’t disappoint - a huge 2 floors of Italian food and drink with 3 restaurants on the top floor to choose from - can confirm the pizza was one of the best I’ve had in a long time.
Once you’ve finished your meal you can browse the entire shop - I spotted some of my fave wines in there that aren’t normally available in other stores. My favourites are Ferrari and Franciacorta - just brilliant sparkling italian wines. The meat and cheese counters had the best products - and queues of folk eager to buy the produce. Aged ribs of beef stood in a chiller cabinet with dates of slaughter and butchery - some looking dark and fabulous-
I must have walked about 20k steps so I think the 2 meals balanced my step count out ! Ha ha (who am I kidding ?)

23 years!! I’m hanging up my apron - it’s been a wonderful, fun, sometimes bizarre, but brilliant time running my own business.
I’ve been privileged to cater for some amazing people at the most amazing venues over the years and it’s fair to say many of my clients have now become friends. How cool is that?

So as I reflect on the times and happy memories - thank you for your friendships …. It’s not the end though - you’ll maybe notice my new Instagram name - I’ll continue to share recipes and tips on food and drink as I merrily face the next challenges this year holds.

Happy New Year
A tradition in my family is to go out for lunch on this special day - one of the rare days I refuse to cook, cos heaven knows I do enough of that all year, and let’s face it 1st Jan can be a bit of an anti climax - Today we took a trip to the beautiful Hampshire town of , a short drive down the A34 not too far from Andover
I’d booked a table at as I’ve been here before with a friend and the food, drink and service really is outstanding….. a chilled glass of Hampshire Rose wine and a stonking lunch then a wander round the cute little town… perfect in every way

Hope you’re all having a great start to the year - 2022 is going to be a year for new chapters - cheers to you all

Just one more delivery to do!
It’s been a busy day delivering feasts and dinners to my lovely clients all over Berkshire - you lot just love a Christmas feast. But for now I’ve got my feet up with a cold glass of something super chilled whilst I enjoy my Xmas tree lights and mantelpiece decs - it’ll soon be time to switch off the phone, get the table set, sort the final foodie prep for our family Christmas lunch and relaaaa######x
One more delivery to do to special client in London tomorrow- then it’s off to church carol service at 6 with mulled wine and lots of singing out of tune 😂😂
Merry Christmas insta chums - it’s been a hell of a year but we made it. Hip hip hooray to all my fellow small business owners - it’s time to relax (almost) and drink and eat ourselves silly 🙃

𝙎𝙚𝙥𝙩𝙚𝙢𝙗𝙚𝙧 𝙖𝙣𝙙 𝙊𝙘𝙩𝙤𝙗𝙚𝙧

🥕Gosh I realised I haven’t popped any posts up here for a while - how have September & October come and gone so quickly ?

🍅As we edge into Autumn & Winter & dare I say the Chris……you know what season, it’s good to take a breath and reflect on what’s been a tremendous couple of months for the business.

🍅Never in my wildest dreams did I imagine the work diary would be so incredibly bonkers. Big parties, small gatherings, corporate events, garden parties, bbq bashes …. we’ve done it all.

🍆The sun has shone, the rain bucketed down but we did it …. with the expert help of our business friends …the marquee folk, the equipment hire chaps, the linen hire company and of course my brilliant fabulous team of helpers. My wonderful team and I have been so happy to be back doing what we love - looking after you!

🫒Here’s to more fabulous food and fun for the last 2 months of this bizarre year ….

🥑Let’s hope lockdowns are a thing of the past …. and celebrate all the good times to come

What a week …..September is always the busiest month for me ….with back to back events every week. This week was the 75th anniversary of the Almshouses trust who held their big celebration in Bucklebury. And 24 hrs later we were back in the same beautiful home for the new High Sheriff of Berkshire celebrations….. 1400 canapés made and served to the guests along with wine and soft drinks. Last event 19 Sept ……then another short break for a visit to Devon before the Autumn parties and shoot season restarts

Back at the fabulous stables of racehorse trainer Oliver Sherwood - famous for many of his racing accomplishments including the brilliant and awesome “Many Clouds”
We were back in our catering marquee preparing canapés to serve with champagne to the horse owners. We then served a 2 course lunch followed by coffee and tea ans petits fours - never get time enough to take snaps of the food- so instead I give you working snaps of the wonderful team who work alongside me on each event! They really are the best !!!

It’s great to be asked back year after year to cater for such special people ! And great to be back with the team after such a long gap last year 🥰🥰🥰

I’m finally out of the kitchen and the cooking marathon that has kept me busy for the last few weeks - and I’ve escaped to Kent - Whitstable to be more precise - lots of cycling along the coastal sea walls and of course lots of fabulous meals planned - oh yes - I made sure I booked into some cracking places before I even booked our accommodation !
The Sportsman at Seasalter is on the agenda and with waiting lists of 5 months it’s going to be a dream fulfilled to finally get there

𝘽𝙖𝙘𝙠 𝙞𝙣 𝙩𝙝𝙚 𝙩𝙝𝙞𝙘𝙠 𝙤𝙛 𝙞𝙩

🍓Well it’s been a totally jaw dropping, back breaking couple of months since work for caterers opened up again …..mostly limited to 30 max in gardens and small intimate indoor dinners. I’m grateful for so many regular clients who have come up trumps and supported me and my business over many years and who continue to send work my way.

🍓Like so many small independent catering companies it was a tough time for us all but we’ve survived and postponed dates and events to later this year and next to keep everyone happy.

🍓I’ve had my own catering business for 22 years now …and it has grown every single year until the dreaded covid struck in 2020.
But ….here I am …still at it …still loving the cooking, planning, working with my team at some of the best locations in Berkshire. June and July have been busy beyond my wildest dreams so many barbecues and celebratory meals ….here’s to the rest of the Summer ….

Saturday 29 May - first wedding of the year - What a stunning day it was ...the sun shone, guests enjoyed Bollinger along with their canapés, before sitting down to a sumptuous 3 course wedding breakfast. 𝘽𝙖𝙠𝙚𝙙 𝙀𝙜𝙜𝙨 𝙖𝙣𝙙 𝙎𝙢𝙤𝙠𝙚𝙙 𝙎𝙖𝙡𝙢𝙤𝙣

This is one of my favourite simple suppers ....when you need something tasty and with just a handful of ingredients that to be frank are always in my fridge ...( don’t judge me ) smoked salmon, eggs, cream, chives ....thats it - 4 ingredients to get a tasty supper or lunch dish

Here’s how to make them

1. Line a muffin tin with baking parchment all scrunched up
2. Lay some smoked salmon into the cups
3. Crack an egg into the salmon
4. Add a wee dollop of cream or creme fraiche or dont use cream if you don’t fancy it
5. Snip some chives over the top
6. Place the muffin tin into preheated oven at 180oc for 30 mins
7. Rustle up a salad to serve with the baked eggs

🍾What a couple of weeks I’ve had. The phone and emails have been going berserk with parties and events for the Summer ahead. The long wait - just a year or so ....and counting could be over for us all. The dinners, the get togethers, the bbq’s, the weddings, the parties, the celebrations....... oh yes we are loving the line up so far.

𝙃𝙤𝙢𝙚 𝙘𝙪𝙧𝙚𝙙 𝙖𝙣𝙙 𝙨𝙢𝙤𝙠𝙚𝙙 𝙩𝙧𝙤𝙪𝙩

Well this was a cracker of a fish that I prepared for my weekend meal deliveries. Curing and Smoking is really very simple as long as you have the best fresh fish - mine was from

Here’s the method I used

- mix 1kg Demerara sugar & 1kg sea salt together
- place the trout on to the salt & sugar mix and smother the fish all over the base and top so it’s completely covered. Cover and chill for 24 hrs
- once the 24 hrs is up rinse all the sugar and salt off the trout & pat dry with kitchen roll
- place the whole trout into a container and cover and allow to dry out in the fridge for another 24 hrs
- get your smoker lit and ready - I use a model which is very compact. I used oak wood chips and cold smoked this trout for 6 hrs in total

And that’s it - the result is a stunning vibrant smoky trout ready to slice and eat

I slice my trout straight down to give chunky slices - as you can see

This formed part of my 3 course menu last weekend - I served it with celeriac remoulade, micro leaves, candied walnuts & horseradish cream
