Rosół. This soup (chicken broth) is cooked every Sunday in most Polish houses. Served with egg pasta, in some regions with potatoes or little egg dumplings (lane kluski) and chopped parsley on top.

Ingredients: whole chicken, COLD water, salt and pepper, parsley roots, whole leek, celeriac, carrots (vegetables are cut roughly only) and bunch of lovage (lubczyk). Instead of lovage, which is not available everywhere, you can use dried fenugreek powder or fenugreek leaves.
The secret of keeping the bullion clear is cooking chicken and all vegetables from cold water to boiling and then turning gas down, not letting it bubbling, just simmering slowly for about 2-3 hours. Some people also add a fat piece of beef (e.g., brisket), and then this is necessary to remove dirty protein foam from the top once it goes up.

Had been working tonight for such a lovely people! With the fruit punch on arrival following these little nibbles we ended up with Mediterranean style dinner.

Do you think eating healthy means "boring and tasteless"? NO! healthy cooking means cooking from scratch, picking best ingredients and using natural flavours and colours.
On this picture is today's pudding 120 kcal made from natural yoghurt, vanilla pods and mango pulp. This beautiful purple coloured garnish is nothing else but lyophilisated dragon fruit.

The old tradition in my family town was baking St Martin's croissants for St Martin day at November 11th. I still remember the long queues to buy one for each family member. They are stuffed with white popppyseeds and almond stuffing, topped with sugar icing and nuts or almond flakes.
