An incredible chunk of Argentinian Fore Rib… Reverse Seared on the Tower Kamado Grill… cooked gently till around 37degrees internal as one 2.2kg joint.. then rested for 10minutes and cut in half into two separate ribs.. Ramped up the coals and seared hot to around 48 - 50 internal temps.. lovely and rare… it was incredible.. such a soft and buttery cut.. the fat was amazing… salted on the board to serve..
