Meet the Invicta team!

We’re excited to kick off a series of posts designed to introduce our team! Today, we’re sitting down with Trevor Talbot, our coatings expert, to answer these quick-fire questions. Here are his answers:

1) What’s been your proudest moment at Invicta so far?
"Introducing Invicta's own range of coatings. They are quite simply the best on the market! This is because they combine advanced materials with expert application techniques, ensuring superior non-stick performance, durability, and ease of cleaning. They are specifically designed to withstand the high demands of commercial baking and deliver consistent results batch after batch."

2) If you had to pick out only one Invicta product, which would it be and why?
"Difficult choice but I am going to plump for our aluminium baking trays. They are another industry leader - strong, durable and reliable!"

What is your favourite cake/biscuit?
"It’s a chocolate eclair."

What do you like to do in your spare time?
"Currently involved with house renovation and walking when time permits."

If you could invite somebody, living or dead, to a dinner party, who would they be? "Nelson Mandela would be a fantastic dinner party guest because of his incredible life experiences and ability to connect with people. He could share stories of resilience, forgiveness, and leadership while no doubt keeping the conversation warm and engaging. Plus, his legendary charm and sense of humour would make for an unforgettable evening."

A Very Yorkshire Christmas Tip!

Here’s a festive tip from our Yorkshire roots: have you tried pairing Christmas cake with cheese? It may sound unusual, but trust us—it’s a match made in heaven!

The key is to choose a sharp cheese, like traditional Wensleydale. The tangy flavour perfectly cuts through the richness of the fruit cake, while dried fruit and nuts naturally complement the cheese.

The cake to cheese ratio is also very important. You need a surprising amount of cheese to balance the cake’s sweetness. A ratio of 50:50 is about right.

The recently published British Bakers Top Bakery Trends for 2025 report reveals that baked treats are increasingly being seen as a way to lift the mood, especially among Gen Z consumers who place a stronger emphasis on mental health and wellness.

Indeed, additional research from Tate and Lyle shows that nearly half (45%) of consumers aged 18-34 are buying bakery products every day as an integral part of their diet.

There’s no doubt that baked goods make for a comforting pick-me-up and they’re a much more affordable treat compared to dining out.

This is great news for bakers. Carry on baking happiness into every bite!

Yorkshire Curd Tarts have been a local favourite for centuries! These unique pastries, made with fresh curds, butter, sugar, currants, and a hint of nutmeg, date back to the 17th century. We were immensely proud to see so many of our customers featuring in this year’s Baking Industry Awards, including Aidan Monks (pictured) from the Cumbrian bakery at Lovingly Artisan who took home the coveted Baker of the Year trophy. Montana Bakery won Bakery Manufacturer of the Year and Pettigrew Bakeries were crowned Craft Bakery Business of the Year. Cutter and Squidge were awarded Online Bakery Business of the Year and the adventurous Kimchi & Smoked Cheese Bear Claw from M's Bakery smashed the New Bakery Product of the Year. Stir Bakery’s delicious Sprouted Ancient Grain Sourdough walked away with the Speciality Bread Product of the Year and Geary's Bakery are behind the Bakery Brand of the Year – Jason’s Sourdough.

Wow! That’s quite a list! Congratulations to them all. It is fantastic to work with such a talented and diverse range of customers all of whom are winners to us.

In this part of the world, Yorkshire Parkin is traditionally eaten on Bonfire Night. This treacly treat is the Northern version of gingerbread - the difference being that parkin typically contains oats, while gingerbread does not.

Of course, it is baked to perfection using our sturdy trays and tins.

Just looking ahead to the weekend, it’s National Sandwich Day on Sunday 3 November.

Legend has it that the sandwich was named after John Montagu, the 4th Earl of Sandwich, who asked for meat to be placed between slices of bread so he could eat while playing cards without leaving the table. That was back in 1762, today sandwiches are the ultimate convenience food, offering endless possibilities for customisation. The nation’s favourite sandwich varies depending on which poll you look at but consistently the top three seem to be BLT, ham and cheese and egg mayonnaise.

Whatever your favourite, the secret of a great sandwich is the bread and behind every great loaf of bread is a great tin! We say no more!!
