Preparing to cook for the next retreat group always includes some reflection on the last. Loved cooking for these special women for two whole weeks!!

Menu included:
Red cabbage and carrot slaw in a peanut-lime sauce
Thai curry
Red lentil Coconut Dal with Aloo Chaat (potatoes and chickpeas in tamarind yoghurt with pomegranate and local cherry tomatoes)

Nut & Bean Loaf
Quinoa Salad with wild garlic and currants
Seasonal Rainbow Slaws
Tahini Dressings
Sunflower seed "soft cheese"
Sunflower seed "Mayo"
Whole roasted red peppers

And for Dessert, the fabulous Banoffee Bowl!

We looked at getting our healthy fats from nuts and seeds rather than refined oils, and using dried fruit to sweeten naturally.

Everyone got a recipe booklet from the day and I'm delighted to already see pics of recipe creations at home!

Sharing how to nourish the body in easy, skilful yet simple ways.

I’ve had a real theme lately of what it means to look after myself, properly.

In my own life it means taking care more of the space I live in, taking time to moisturise and other small acts of self care.

In coaching groups people have been telling me “I just want to take care of myself”

One of the greatest way to do this is with nourishing food. Food is the foundation of our well-being from energy to mental wellness.

To take care of ourselves we need to have a handful of recipes that inspire us, feel doable (even after a busy day!), satisfy us and leave us feeling light the next day.

There are three opportunities to join and I for a weekend of holistic, wholefood cookery that will have you covered for breakfast, lunch, dinner and snacks that taste and feel great.

One of my all time favourite meals served this year. I'm revisiting recipes and awesome flavour combos in anticipation of the very first Taste of Wellness cookery retreat in December!

🍀 Healthiest ever “burgers" made with walnuts, butterbeans, oats, sunflower seed, flaxseed and plenty of herbs and spices.

🍀 Roasted spiced cauliflower and fresh tomato with creamy tahini sauce.

🍀 Beetroot and broad bean slaw

🍀 Turmeric gluten-free flatbreads

🍀 Glastonbury grown salad leaves.

Last month this seasonal meal welcomed in the onset of Autumn, served to 100+ women in a lush Somerset field!

A light and healthy, yet very satisfying 'end-of-summer' roast.

Savoury rosemary & thyme butterbean loaf.
Whole roasted butternut.
Spiced chunky roasted beets.
Cream of horseradish dip (made with freshly dug roots!)
Marinated curly kale & quinoa salad.
Quick pickled carrot & cucumber ribbons with caraway.

Whole roasted squash is such a winner for healthy easy meals this time of year, I highly recommend it!

June marked the end of my first year since starting up Little Acre Kitchen 🎉 - a small business offering vibrant plant-based catering. 🌿

It's been a year of many learning curves, cooking for as few as 4 people over a week-long retreat and as many as 150 for a single (and rather extravagant!) meal. 🍜 🥗

I've learned what chickpeas for 100 looks like (see 2nd pic!) and just how much veg will fit in to my, thankfully van-like, car. 😂

When I first started out I didn't expect to offer catering for large numbers but it's been a really wonderful experience - largely thanks to the amazing Julia Bedford - artist, herbalist, community food activist and incredible chef! Check out her grassroots organisations Herbal Brue (community herbal medicine-making) and Feed Avalon in . 🌱🌿

I've loved bringing in what I grow into my cooking and will continue trying to balance my life as grower & chef - though it can be a little tricky at times! Thankfully I've also got fab local producers to supply me with the best in ecological & organic seasonal goodies Plotgate Community Farm Paddington Farm Trust and Avalon Organic Greenhouse. 🍅🍆🥒

Of course, eating well - the stuff that truly nurtures us - land, body and soul - has always been a huge part of starting Little Acre Kitchen and I'm so glad to work with the inspiring Elle of Eat For Health who has taught me so much about nutrition and self-care. Her courses are truly empowering and I'm thrilled to be running our first holistic cookery retreat - The Taste of Wellness - together in December. (We've sold out of residential tickets but have 2 non-residential remaining - PM for details!) 🌱☀️❤️ www.tastingwellness.co.uk

Food seems to be one of those magical things that opens up possibilities and connections between people. So much has already happened that I never would have expected and I'm excited to see what the next year may bring! 💚

Peace and chocolate.

Not capturing the messy kitchen chaos of 11am this morning!! (I have video evidence but it also includes me dancing so it's not getting posted!)

Thankfully the day got calmer, I had a little time to explore and treat my body to some yoga - so needed after a string of long days in the kitchen.

Finished on a high with this chocolate-peanut butter pie 🥧🥧🥧

It's taken a few days to really settle in to this one but I've found my rhythm now and looking forward to the flavours of tomorrow 🌿

Walking yesterday and spotting some edibles/medicinals.

Stitchwort. Jack-by-the-hedge (aka Garlic mustard), the young shoots and buds of Common Hogweed which can be cooked (make sure you know how to tell apart from other members of the carrot family which can be poisonous, eg. Giant Hogweed), Horsetail which I'm still learning about but have had as a tasty herbal tea remedy and of course Nettles, Cleavers, Dandelions, Daisys, Primrose flowers.

I love how the hedgerows have so much to offer while vegetable cultivation goes through its annual "hungry gap".

My last day in Devon was filled with some particularly earthy and grounding dishes.

Butter bean casserole served with a new favourite of mine, buckwheat kasha with olives, sun-dried tomatoes and peas. Jerusalem artichokes roasted and caramelised with lemon juice.

Later a beetroot and walnut dip accompanied by celeriac remoulade and a "cheesy" cauliflower soup. Chocolate-hazelnut slice to finish. Yuuuuum.

I've been off cooking vegetables again! I've cooked in beautiful locations before but this one, overlooking the Dart Valley in an area of outstanding natural beauty .... Wow. Breathtaking indeed!

Have had the pleasure of working alongside some lovely people and *enjoying-not-enjoying* having next to no phone signal. And of course eating very well. Standard!

Those are all the good bits. And of course, the pressures of hospitality work are the pressures of hospitality work. Also standard!

1 day to go and then I will relax and unwind by visiting a dear friend nearby. Enjoy the weekend folks 💞

3 INGREDIENT SMOOTHIE

Recipe below 🌱👍⭐🌟🌟🍸

I'm away from home and didn't have much in the way of smoothie ingredients. But I did get my hands on some overly ripe bananas which I peeled, broke in half and popped in the freezer overnight (wrapped in some baking paper for easy separation later).

I didn't have much else except celery and cucumber, so that's what I went for. And it was divine!! Definitely one of my fave ever smoothies, which I really wasn't expecting.

It's simple but it really is perfect just as it is. Really creamy and refreshing. If you do want an extra kick you could add a chunk of fresh ginger, turmeric or lemon. You could even add a handful of fresh green leaves.

For 1 smoothie:

1 frozen banana
1 stick celery
4 inches cucumber
3/4 cup water

Blend (in a high speed blender for best results!)
Add a little more water to loosen if needed.

Have fun playing with this as a base recipe, I highly recommend it.

And notice how a delicious smoothie doesn't always need milk or juice or coconut water - tap water is just fine paired with great ingredients.

Recipe practice and development is on this week!! Tonight is Cashew & Cauliflower Curry night. YUM (Hint: the cashews make the creamy sauce!)

The clean up after an experimental session in the kitchen is not always pretty - but thankfully I've got the perk of eating my creations to make up for it.
