Only time to photograph one canape this week, rare 28day aged rump on roesti potato with Creamed horseradish mustard and corn salad, served by the beautiful Sammy Daniels. A 70th Birthday for A lovely lady and her close family and good friends in Hawley. A really great bunch. Thanks to you all for making it a perfect night

A little treat for the students at CTC today. Chocolate chip and banana, muffin filled with chocolate creameaux and topped with chocolate and honeycomb..... absolute filth and extremely dietful.

Organic health kick, high protein intake for my client, very low fat. This lamb cannon was sooooo good. I'm eating crunchy nut cornflakes and not jealous at all. The client is a very simple eater and doesn't want fine dining every night, just perfect cooking.

This is our delicious watermelon pork belly. It's was cooked with a dry rub on a sous vide for 48 hours until its melt in the mouth, then the juices were combined with our hand made watermelon Bbq sauce and the belly was smothered and pressed before cutting and portioning, grilling. It was absolutely mouthwatering. If you do have time to do this yourselves, it's definitely worth giving it a go.
