BC Master Chef contestant, Karen Kemp is a natural cook, full of fresh ideas and amazing combinations that work. Her own favourite dish is a griddled free-range chicken, stuffed with handfuls of fresh herbs and lemons. She makes the skin naughty and crispy; serving the dish with a simple salad of mixed leaves and fresh crusty bread, or perfect crunchy roasties. Whatever you choose, Karen's mission is to give your food the 'wow' factor.

The secrets of a wedding caterer.
We all hope and try to ensure that every wedding will be flawless, but SOMETIMES things go wrong. A few years ago a couple chose a perfect wooded valley (at the time full of bluebells) with a gentle babbling brook at its centre, as a location in which to put a tipi for their wedding. We had a quick look a couple of months before and it was utter bliss. HOWEVER in the week before the wedding (in July) the weather turned and it poured down. The valley filled with a few inches of water and on the day itself, the whole field was a sea of liquid mud thanks to the lovely Tipi guys building the tent in the days before.

We duly dragged all our crates through to the catering area, whereupon we provided the perfect four course feast whilst standing all day in 3 inches of liquid slime. We warned the waiting staff to bring wellies (which they did), and the team then delivered the whole thing as if nothing had happened. The guests all wore wellies too and there was a collective determination to have FUN.

Having a 'never say die' attitude and rising to all challenges is what we are all about. We still call it 'The Somme Experience' for obvious reasons.

The secrets of a wedding caterer.
We all hope and try to ensure that every wedding will be flawless, but SOMETIMES things go wrong.. a few years ago at Bride and Groom booked a coach to take them and most of their 100 guests from the Church to the venue where they were having icy cold Champagne and our homemade canapes.. HOWEVER, the coach driver got lost in the narrow country lanes for over an hour - which meant that 25 guests had a relaxed time eating and drinking and the rest arrived somewhat frazzled. We were cool of course and slowed down the preparation of the main meal and pushed back the 'sit down for dinner' time so that everyone had canapes and Champagne when they finally arrived. So, whilst we need a clear and precise schedule to ensure the food is served at its tip-top best, we are flexible too. Our infamous 'client checklist' that all our couples fill in, contains this highly amusing story and its never happened since... thank goodness.

The French certainly know their onions (or lettuces or mushrooms) when it comes to displaying their wares.

This old fave dish of piedmont roasted red peppers with tomatoes, basil, garlic and extra virgin olive oil is making an appearance at many a wedding so far this season. Rightly so๐Ÿ˜
