The tail end of our game course today. Things got better and better …. We made a gigantic game pie. 🥧 Thai spiced pheasant burgers 🍔 roasted pigeon 🐦 with parsnip purée, venison 🦌 loin, and a Pheasant Katsu Curry 🍛… the best day ever in our cookery school. GAME COURSES ARE AMAZING. Thanks to our lovely guests from we had a fab day in the kitchen.

This chocolate torte has a fond place in my heart. Great recipes come from all sorts of strange places. This was in My First Cookbook by and I used to make it every year for my mums birthday, from the age of about 9. The recipe has never changed. It’s amazing. I just added raspberries to cut the richness. Dark chocolate and almond torte. raspberry sorbet.

First of all, thank you for an incredible year. It was our best year in our four-year journey, and we are so grateful for your support. We have had countless repeat clients who have supported us faithfully since our conception. We have grown our businesses. We have more packages to offer our wonderful hen parties and other fabulous guests. That said, as we review our figures, it’s clear that while sales are growing, rising costs are putting pressure on our profits. Our ethos from the outset has been to support local. All our suppliers are within our hours radius to the luxury accommodation we cook at. We truly are firm about farm to fork, field to plate, sustainable fishing and zero ultra processed food. We make it all in house from scratch.

This year, we’re facing several unavoidable increases in our expenses:
• The National Minimum Wage is increasing. While all my staff are paid well above this, we always align raises with these changes.
• National Insurance contributions for employers are rising.
• Rate relief is being reduced.
• Across the board, the cost of goods and services is soaring. In December alone, we noted countless price hikes of 10%, 15%, even 20%. For example, Fior di Latte saw a 33% increase last year!

We have worked hard to avoid increasing prices, even lowering them after lockdown. However, when clients make enquiries for £35- £45 per head this baffles me when one cannot even eat out for this price anymore. Private dining is an experience from start to finish. It takes us two days to shop and prep for an event. We are then working all that day until 11pm when the last crate is unloaded from our car and the last napkin is popped in the washing machine.
We provide a specialist service and you get a lot for your buck. The administration for each client to personalise the experience and tailor each menu, discuss dietary requirements, perfect timings and make sure everyone is happy is extensive. The prep lists , the shops, the travel, the tableware …. Flowers, canapés, prep, a fully serviced three course dinner, the clearing up. We have a carefully curated fixed price. We think it’s reasonable. We hope you do too
